Yellow Squash and Corn Casserole
Very good. My changes were to reduce the sugar (eyeballed about a tablespoon), eliminate the parm, used two garlic cloves, one small onion, and two yellow squash. Sauteed onion, squash, and garlic first. Added about 1/3 cup cheddar to the casserole and topped with about 1/4 cup. Also used pancake mix rather than baking mix as it was what I had and didn't feel like mixing up from scratch. Very tasty!

Garlic Parmesan Orange Roughy
Very good, easy recipe, but I did alter a bit. I seasoned the fish with salt, pepper, and the lemon squeeze and let it sit for 5-10 minutes. Also, I forgot to add mayonnaise and used straight dijon for that ingredient, then used garlic powder instead of garlic b/c I felt lazy. Stirred it up, it seemed lacking so added a splash of white wine. This turned out excellent, although next time I would half the butter because that was the only ingredient which seemed a bit overpowering.

Tzatziki I
I used the exact ingredients, with the exception of using greek yogurt instead of yogurt, but ignored the directions. I quartered the cukes, deseeded them, then sliced them thinly with a mandolin. Then put them in a colander with salt for a while, but I don't think it did much. When I was ready to put it all together, I put the cucumber slices in a kitchen towel and squeezed hard - that worked. I mixed all the other ingredients first, then stirred the cucumber slices in. Put it in the fridge for a few hours, and upon taste testing it got the "put this in regular rotation" seal of approval from the husband. It was absolutely not runny using this method.
