I added butter and used fresh spinach instead of frozen, but it turned out really good! I don't usually care for pasta dishes and always find them bland, but this was quite good. I will definitely make it again!

Eggplant Mexicano

I substituted olive oil instead of vegetable oil. I felt the eggplant soaked up too much of the oil, unfortunately. Otherwise, this is a pretty good recipe for eggplant.
