Absolutely Excellent Oatmeal Cookies

Great recipe. Get the sour milk by adding 1 T. lemon juice or vinegar to 1 c. milk. I doubled the cinnamon (it really needed that), and added 1 c. butterscotch chips and 1 c. chopped walnuts as the additions (nothing else). My family loved these. They come out puffy and soft, not chewy like a granola bar.

Strawberry Lemonade Ice Pops

These were yummy! We froze them in a popsicle maker set I got at the dollar store, and they tasted great. I thought of maybe stirring in some cool whip next time to make them "creamy" tasting but I don't know if they'd freeze hard. These were just the right sweet/tart taste. Thanks!

Slow Cooker Taco Soup

I took advice from other reviewers and made the following changes: added 2 TBS chili powder and 1 tsp garlic powder along with the taco seasoning and cut the water in half (mostly because my crockpot was so full). I used garlic and onion seasoned diced tomatoes also. We ate this with sour cream and crushed tortilla chips, Y-U-M!!! A keeper!

Whoopie Pies VI

Very good recipe. We liked the cake part, it was chocolatey enough for us. We had to double the filling part of the recipe to fill all the pies. We did cut back the butter, using only 3/4 the amount. It was thick enough, and did not leak out like some people put in their review. Will make again, these were yummy!!

Pecan Butterscotch Pie

I was a bit skeptical, but made this to take to Easter dinner. It was so yummy, and honestly, was even better the next day! It looks very fancy, and was sweet but not too sweet. We loved it! Thanks!

Slow Cooker Chicken with Stuffing

Made this recently- added chopped celery and sliced carrots to the bottom of the crock pot before adding the chicken as other reviewers suggested. Used 4 chicken breasts, and we ate this several times during the week, it made alot! Also, I cooked it on high for 4 hours instead of on low. Worked great. Hubby even scooped some over some left over spaghetti and took it to work for his lunch. The next day I did the same- sooo good!

Mama's Asian Chicken and Rice

Delicious! I did not have the Chinese 5 spice, so I used a substitution one other reviewer suggested: 1/2 tsp. ginger, 1/4 tsp cayenne pepper, and 1/8 tsp anise seed. I also did not have any orange juice, so I just left it out (I have found thru experience that there is no good substitute for OJ!) and added 1 TBS hoisin sauce, just 'cause I had it in the frig. I can see where the asian chili sauce would add a kick too, like one reviewer said, but I did not have any. I found there was plenty of sauce, I would not double. Will def make this again!

Three Bean Dip

This was really yummy. I did make some changes due to what I had on hand. I used a 4 ounce can of chopped green chilis instead of the pepper, and only half a can each of black and white beans, I thought two whole cans would be too much, and one bunch of green onions. The best part is this stored very well in the frig and we ate off it for 3-4 days, and it did not get soggy or gross! My whole family loved it as well as the friends I originally made it for the first day! Will make again!

Quick Gnocchi

I found this recipe labor intensive for what it was. Although we liked the gnocchi, I wouldn't make this recipe again. First, you can only make a few at a time, so we did not really get to eat as a family. We have a local brand of frozen that are just as good or better. Sorry!

Refreshing Cucumber Salad

I was very nervous making this because I was making it for a physician I work with who described a cucumber salad he wanted for the semi-retirement lunch we were having for him. I used red onion as he requested and added a little sugar to the dressing so it would not be too tart. He was thrilled and everyone else loved it as well, including my daughter who had some of the leftovers! I should add that I sprinkled the sliced cucumbers with salt and vinegar and let it sit for an hour to draw out the water, rinsed them off them dried them between paper towels before actually making the recipe (and by "dry" I mean pressed them firmly). I was worried the salad would be runny since I was making it the night before, but this process worked great, and the salad was crispy and not runny at all.

No Bake Sugar Free Cheese Cake

I made this for my diabetic father- in-law for a family gathering. He liked it and so did everyone else who tried it!! I did add an extra low fat cream cheese, but that was the only change I made. Good recipe for company who are watching their sugar intake!

Corn Chip Salad

Sweet and Sour Zucchini Salad

I brought this to a staff picnic, everyone loved it! I used red wine vinegar instead of white (because I didn't have any). I also used red pepper instead of green to add some color. I took the advice of other reviewers and made it the night before so it could marinate overnight.

Irish Cream Truffle Fudge

Boy this was awesome! I made it to give as gifts, and everyone loved it. Next time I might switch to a 9x9 pan to make it not as thick. It filled my 8x8 pan to the brim. Delicious!

S'more Brownies

Made these as directed except substituted 1 1/2 c peanut butter chips for the Hershey bars (did not have them on hand). These were delicious! Followed other reviewers advice and added the topping during the last 6 min of cooking. Marshmallows were lightly browned and crackers were crisp. Yummy!

Too Much Chocolate Cake

Like many reviewers, this is my go-to, no fail, always outstanding chocolate cake recipe! I have now made this at least 6 times over the past year, and no matter when or where I serve it, it's a hit! I have not tried tweeking it at all (which is not like me) because it's so good the way it is. Enjoy!

Chicken Noodle Casserole I

I read other reviews and decided to add some garlic powder and pepper, but not salt as the condensed soups are high in sodium already. I also added a 1/2 cup of milk to the soup/sour cream mixture and used a whole bag of cooked egg noodles. One other addition was 1/2 of a red bell pepper sauted in a little oil (for color). It was delicious!! I am so happy to have another recipe to add to my rotation! Will definitely make again (and again)!!

Seven Layer Tortilla Pie

My 11 yr.old daughter and I played with this recipe and took some suggestions from other reviewers. It was delicious!! I cut the tortillas in strips, thought it would be easier to serve (and it was). Don't be afraid to throw in whatever you have. I added a can of green chilis, this made the taste! Also a little cumin, which I love in mexican food. I also layered in 1 lb. of browed ground beef drained and seasoned with an env. of taco seasoning. I layered it all in a deep 13x9 pan to feed my hungry family. We ate the whole thing!! No leftovers with this one, my kids, 6,11, 14 LOVED it! Have fun with it, you can't mess it up! 2008- This recipe is still a regular in our home, we love it and the leftovers are great! 2010- Still making this on a regular basis, had it tonight for dinner, just love it!
