Mushroom Chicken Piccata

This was awesome! Made it for friends and everyone raved! I doubled the sauce because these recipes never seem to have enough sauce and I was serving whipped potatoes with the chicken and wanted enough to be able to use it as gravy for the potatoes. I followed one reviewer who made the chicken as directed, save it on a platter in a warm oven while you make the sauce, then poured the sauce over the chicken and serve. Will definitely make again!

Refreshing Cucumber Salad

I was very nervous making this because I was making it for a physician I work with who described a cucumber salad he wanted for the semi-retirement lunch we were having for him. I used red onion as he requested and added a little sugar to the dressing so it would not be too tart. He was thrilled and everyone else loved it as well, including my daughter who had some of the leftovers! I should add that I sprinkled the sliced cucumbers with salt and vinegar and let it sit for an hour to draw out the water, rinsed them off them dried them between paper towels before actually making the recipe (and by "dry" I mean pressed them firmly). I was worried the salad would be runny since I was making it the night before, but this process worked great, and the salad was crispy and not runny at all.

Scottish Shortbread II

Traditional Scottish shortbread- delicious! I doubled the recipe, and divided it between 3 8-inch cake pans, prick the dough and bake 20 min. Perfect.

Ultimate Twice Baked Potatoes

Great! Made these for New Year's Eve dinner. Subbed grated parm for cheddar (as I forgot to buy it!) and added some sauteed onion instead of chives to the potato mixture. Made them the night before and put them on a cookie sheet covered in frig overnight, then warmed them for 35 min in oven. Delicious! Our dinner party loved them!

Baked Flan

This is the best flan I have ever made! I used almond extract instead of vanilla, and it was delicious! Thanks to other reviewers who gave advice on how to complete the recipe: take flan out of water bath to cool; don't overcook, as flan DOES firm up when refrigerated overnight! Mine looked very soupy when I took it out, but let it cool completely on counter out of water bath and then put in frig overnight and it was perfect, very creamy texture! Also, had a little issue with the sugar topping releasing from bottom of my glass loaf pan. When i flipped it, most of the sugar had turned to syrup and streamed down the flan like it is supposed to, but I also had like a 1/8th inch layer that was completely adhered to the pan! Took many rounds of soaking to finally be able to scrape it out! Not sure what happened there, but still loved the flan- will make again!

Hot Toddy

Oh ya! Love me a hot toddy and this recipe is great! Warms the soul and so relaxing! Used pinches of spices in the recipe as did not have cinnamon sticks or whole cloves- tasted great!

Brown Sugar Meatloaf

Great! Used an envelope of onion soup mix instead of chopped onion (omit salt), and used Ritz crackers as others suggested. Also, used 1/3 cup red wine in place of milk (to use up a bottle of wine). This was delicious, will make again!

Slow Cooker Chicken with Stuffing

Made this recently- added chopped celery and sliced carrots to the bottom of the crock pot before adding the chicken as other reviewers suggested. Used 4 chicken breasts, and we ate this several times during the week, it made alot! Also, I cooked it on high for 4 hours instead of on low. Worked great. Hubby even scooped some over some left over spaghetti and took it to work for his lunch. The next day I did the same- sooo good!

Lap Salad

This was very good. I used the sesame oil (2 TBS) and rice vinegar in place of regular, and a bag of slaw mix with carrots and red cabbage as others recommended. It was a tangy tasting salad, which was a nice change. Felt it still needed a little "something" which is why I gave it 4 stars instead of 5. Will experiment to see what could kick it up one more notch!

Authentic German Potato Salad

Just like my mom used to make- delicious! I doubled the sauce recipe as suggested by another reviewer. Also, used white wine vinegar because I was out of regular. A great alternative to regular potato salad! My family LOVED it!

Rhubarb Cake I

This was delicious. Moist and tart-sweet. Cut sugar to 1 cup and increased rhubarb to 3 cups as other reviewers have, and used 1/2 c sugar mixed with 2 tsp cinnamon as the topping as suggested by one reviewer. Also added 1/3 cup dried cranberries for the heck of it. Yummy, will definitely make again!

Roast Chicken with Rosemary

This was delicious! The only thing I did different was to separate the skin from the chicken and rub olive oil directly on the meat under the skin as well as on the outside. I saw this on a cooking show once. I cooked it in a covered roasting pan. Serve with roasted red potatoes and pan grilled asparagus. Fantastic!

Chicken Riggies

Delicious! I used about 2/3 of a 15 oz jar of roasted red peppers cut up, and since I did not have the cubanelle or hot cherry peppers, I cautiously dripped in hot habenero sauce until the heat was just right. This was outstanding!

Meringue Cookies

Easy and traditional meringue cookie. I had 6 egg whites left over from another recipe, so made a triple batch! This made ALOT of cookies! I did follow other reviewers and left them in the oven turned off after baking time was done for an additional 30 min. Then removed them to a cooling rack. They were crisp and melt in your mouth. My daughter took some to a friend's house who had never had meringue cookies, she said they were skeptical, but after tasting, ate the whole plateful! Oh ya, made them without chocolate chips.

Merritt's Butternut Squash Gratin

Delicious! Took to a dinner party and got great reviews! Only changes I made were, I used feta instead of gruyer (because I had it in the frig) and panko for the bread crumbs. I turned the broiler on for a few minutes at the end to brown the topping. It looked lovely and had a crunch. Will make again!

Tiramisu Layer Cake

Made this for daughter's birthday. Used some hints from other reviewers- added instant coffee to strong coffee to make extra strong and used as substitute for water in cake mix. Used extra Kaluah when drizzling on layers, also drizzled 1 TBS rum on middle layer along with Kaluah mixture. Delicious cake, family and guests loved it! Personally I prefer traditional tiramisu, but the cake was beautiful and yummy!

Pork Chops with Raspberry Sauce

Very good recipe- and very easy! Family loved it! I made double the sauce because I had like 8 pork chops- doubling made PLENTY of sauce! I placed the cooked chops on a platter and poured the sauce over the top. Yummy!

S'more Brownies

Made these as directed except substituted 1 1/2 c peanut butter chips for the Hershey bars (did not have them on hand). These were delicious! Followed other reviewers advice and added the topping during the last 6 min of cooking. Marshmallows were lightly browned and crackers were crisp. Yummy!

Pepperoni Bread

Easy peasy- used prepared pizza dough from local grocery store, layered everything up, rolled it up, and baked (mine was done in like 20 min). Took it out of oven and to a friend's house covered in a kitchen towel to keep warm. This ended up being a very good thing because it actually kept some of the moisture in as it cooled and softened up the crust which had been quite hard when I took it out of oven. Great recipe- it was gone in like 15 min!! Plan to make a few at a time, then can keep one in the freezer to reheat when needed!

Too Much Chocolate Cake

Like many reviewers, this is my go-to, no fail, always outstanding chocolate cake recipe! I have now made this at least 6 times over the past year, and no matter when or where I serve it, it's a hit! I have not tried tweeking it at all (which is not like me) because it's so good the way it is. Enjoy!
