Creamy Italian Chicken

I have made this before and would have only given it 2 stars BUT I did the following the second time around and made it a 5 star winner: Sear 1.5-2 pounds of chicken thighs in olive oil, salt pepper and garlic powder on both sides, remove from skillet and cut into chunks. Add to slow cooker and cook as directed. Use one small box baby bella sliced mushrooms instead of canned, sauteed in olive oil, salt, pepper and garlic with 1/2 cup diced onion until soft (5-7 min). Set aside. Proceed with recipe as directed, adding the mushrooms after adding the cream cheese mixture (don't beat the mushrooms). WOW!! This was spectacular! Solved the very bland taste I got the first time.

The Best Vegetarian Chili in the World

Indeed the best vegetarian chili in the world! There's alot of room to customize, so here's what I did: Used 2 cans (28 oz) crushed tomatoes and 1 can fire roasted diced tomatoes; used all spices as listed and added chipotle Tabasco sauce to taste; only used 1/2 bag crumbles as that's all I had on hand. FAB-U-LOUS!!! Better each day is sat in the frig! Had portioned some out to freeze as it makes a TON of chili, but it all got eaten before any made it to the freezer! My vegetarian daughter ate it for lunch and dinner during her school break for 4 days in a row. Will definitely make again!

Ramen Noodle Frittata

Simple but yummy for a quick meal. Made this for my vegetarian daughter who really enjoyed it. Really is an open canvas, you could add anything you wanted, I added extra sauteed veggies. Will def make again (and again!)

Chocolate Chip Cheesecake I

By far THE BEST cheesecake recipe I have ever made, and I have been making cheesecake for over 25 years! I baked it using the water bath method which prevents the top of the cheesecake from cracking. I served it on Christmas day and my family loved it, everyone agreed it was the best ever!Will most likely be making it again in early January for my husband's birthday, it is sooooo good!

Christmas Brunch Casserole

This a a great basic recipe. I doubled the eggs as suggested by others, and generously seasoned the hash brown potatoes (which were basically chopped raw potato) before layering up the rest of the ingredients. Also, I ran the cooked bacon through the food processor, so it was chopped super fine. I added the cheese half way through cooking, otherwise it would have been burnt. It did not take one hour to cook, more like 45 min. I took it to work for a brunch, everyone loved it!

Pumpkin Wheat Honey Muffins

These were moist, but VERY sweet! I don't think it needs brown sugar and honey both. Next time I might try cutting back the honey to like 2 or 3 tablespoons. Also, I used dried cranberries instead of raisins (soaked them as directed) and they worked great.

Blueberry Cream Muffins

These were dense and moist. I also substituted 1 cup brown sugar for one cup of white sugar and used 3 cups blueberries, which this recipe can easily accommodate. They are VERY sweet. May decrease the sugar next time.

Pumpkin Bread IV

Made this for the first time a few weeks ago and made a loaf, then made some batter into muffins to which I added chopped walnuts and garnished with a half walnut on top half way through baking. This let the walnut toast just a little. I packed them in a pretty box for another friend's birthday. They were a HUGE hit! I made the rest into mini loaves. NOTE: This recipe makes a TON of batter, I had to use the crock from my slow cooker to do the final mix as I had no bowl big enough!

Half Time Hoisin Chicken Wings

These were fabulous! Took them to a Super Bowl party and everyone loved them! So flavorful! I used Tyson frozen chicken wings and rinsed the ice glaze off before cooking- will definitely make again!

Mushroom Chicken Piccata

This was awesome! Made it for friends and everyone raved! I doubled the sauce because these recipes never seem to have enough sauce and I was serving whipped potatoes with the chicken and wanted enough to be able to use it as gravy for the potatoes. I followed one reviewer who made the chicken as directed, save it on a platter in a warm oven while you make the sauce, then poured the sauce over the chicken and serve. Will definitely make again!

Refreshing Cucumber Salad

I was very nervous making this because I was making it for a physician I work with who described a cucumber salad he wanted for the semi-retirement lunch we were having for him. I used red onion as he requested and added a little sugar to the dressing so it would not be too tart. He was thrilled and everyone else loved it as well, including my daughter who had some of the leftovers! I should add that I sprinkled the sliced cucumbers with salt and vinegar and let it sit for an hour to draw out the water, rinsed them off them dried them between paper towels before actually making the recipe (and by "dry" I mean pressed them firmly). I was worried the salad would be runny since I was making it the night before, but this process worked great, and the salad was crispy and not runny at all.

Ultimate Twice Baked Potatoes

Great! Made these for New Year's Eve dinner. Subbed grated parm for cheddar (as I forgot to buy it!) and added some sauteed onion instead of chives to the potato mixture. Made them the night before and put them on a cookie sheet covered in frig overnight, then warmed them for 35 min in oven. Delicious! Our dinner party loved them!

Baked Flan

This is the best flan I have ever made! I used almond extract instead of vanilla, and it was delicious! Thanks to other reviewers who gave advice on how to complete the recipe: take flan out of water bath to cool; don't overcook, as flan DOES firm up when refrigerated overnight! Mine looked very soupy when I took it out, but let it cool completely on counter out of water bath and then put in frig overnight and it was perfect, very creamy texture! Also, had a little issue with the sugar topping releasing from bottom of my glass loaf pan. When i flipped it, most of the sugar had turned to syrup and streamed down the flan like it is supposed to, but I also had like a 1/8th inch layer that was completely adhered to the pan! Took many rounds of soaking to finally be able to scrape it out! Not sure what happened there, but still loved the flan- will make again!

Brown Sugar Meatloaf

Great! Used an envelope of onion soup mix instead of chopped onion (omit salt), and used Ritz crackers as others suggested. Also, used 1/3 cup red wine in place of milk (to use up a bottle of wine). This was delicious, will make again!

Slow Cooker Chicken with Stuffing

Made this recently- added chopped celery and sliced carrots to the bottom of the crock pot before adding the chicken as other reviewers suggested. Used 4 chicken breasts, and we ate this several times during the week, it made alot! Also, I cooked it on high for 4 hours instead of on low. Worked great. Hubby even scooped some over some left over spaghetti and took it to work for his lunch. The next day I did the same- sooo good!
