Pasta Salad with Homemade Dressing

Best pasta salad I've ever made! I used the hint by another reviewer to save a little of the dressing to toss on just before serving. Also, I did not have a cucumber, so used what I had which was a small zucchini sliced and cut into quarters, tasted great!

Zucchini Crustless Quiche

Like other reviewers, I used this recipe to create my own crustless quiche! I made it more traditionally by using eggs and 2 cups half and half, 1 cup shredded cheddar instead of the parm and feta cheese, and used the chopped veggies it called for. I also added about 1/2 cup flour in case the zucchini and red pepper added too much extra moisture. I cooked it in a square stone baking pan for about 45 min. It came out perfect!

Baked Brie with Quebec Maple Syrup

Tortillas II

The consistency after being cooked was right, but they did not taste very good. I made them in a pinch when I found myself out of tortillas for fish tacos. Next time will make a trip to the store, would not make again.

Spiced Quinoa

Wow! Loved this! Made as diected only used dried cranberries instead of raisins, and no nuts as I did not have any. Great mix of spices! Will definitely make again!!

Shepherd's Pie

I also made a few adjustments: used 1 jar beef gravy and 1 cup sour cream as suggested, with 1 lb ground beef and 1 pound turkey sausage, with sliced fresh mushrooms and onion browned and drained. Had left over mashed potatoes as the topping. YUM!

7-Up® Biscuits

My dough was soupy, I, like other reviewers, had to add at least 1 more cup of bisquick in order to get a consistency for drop biscuits. Wish I had read reviews first like I do 99% of the time! They came out ok, very fluffy, not really bisuit-like. Also- I used Polar Half and Half (grapefuit) soda, which did not alter the overall taste (I've made them before with lemon-lime soda).

Butternut Squash Soup II

Fantastic! I cooked the squash by cutting it in half and covering it with plastic wrap, put in the microwave for 20 min then let it sit for 10 min before removing from microwave. Cooked perfectly, scooped it out, and added it to soup and pureed soup in blender. Seasoned with sea salt, pepper and 1/2 tsp allspice. Perfect!!!

Fish Tacos

This recipe was FANTASTIC!!!!! I made it as written except for using what I had on hand in a few places: I did not have a jalapeno pepper so I used a few drops of chipotle Tabasco. I also used spring mix greens instead of cabbage, and talapia instead of cod. My whole family LOVED these! Will def make again!!

Slow Cooker Adobo Chicken with Bok Choy

This was easy, and I made it as directed with the only alteration being I let the mixture cook on high after adding the bok choy for about 30 min, and after 15, mixed it into the liquid to wilt it. I also added a little corn starch to thicken the liquid into more of a gravy. I used smoked chipotle paprika which kicked up the heat! Family loved it, I would not say it was sour or spicy as some reviewers did, we thought the tanginess was good. Will make again!

Quinoa and Black Beans

Made as directed except I did not have broth so I used 1 1/2 cup water with 2 bouillon cubes dissolved. When I first taste tested the quinoa for doneness, I was worried because it was extremely salty!! That's something you can't fix! I proceeded on with the recipe, and had to add a little more water as the quinoa was not as tender as I'd have liked. Once all the ingredients were added and simmered, it tasted fine, however, if I need to make that substitution again, I would only use 1 bouillon cube! Also, it makes alot, I reheated some in the microwave 2 nights later to go with our dinner, and it tasted even better! One of those dishes that gets better after it sits a day or so! Will definitely make again!

Cream Puff Cake

Made this for a family dinner tonight. Used the bakery cream recipe from this site instead of the pudding mixture as the filling- if you bake you will have the ingredients in your pantry, and use less artificial ingredients!! Also used real whipped cream instead of frozen whipped topping, and hot fudge sauce as the chocolate topping. It was wonderful! I made the pastry in the 13x9 pan as directed and it came out beautiful, will be making this many more times!

Delicious bakery worthy cream! Made this to use as filling for the Cream Puff Cake recipe from this site- perfect! Wondering if I could make it maple flavored for the fall, maybe use maple syrup instead of sugar, might have to try it!

Blueberry Scones

As other reviewers said, the dough is sticky, but that did not begin to describe how wet the dough is! I literally could not handle it (because it was dripping through my fingers) and had to add at least 1/4-1/2 cup more flour just to get it from "wet blob" to "sticky." As others also found, it had little to no flavor even though I did add 1 tsp vanilla (as others recommended). I would not make these again.

Creamy Italian Chicken

I have made this before and would have only given it 2 stars BUT I did the following the second time around and made it a 5 star winner: Sear 1.5-2 pounds of chicken thighs in olive oil, salt pepper and garlic powder on both sides, remove from skillet and cut into chunks. Add to slow cooker and cook as directed. Use one small box baby bella sliced mushrooms instead of canned, sauteed in olive oil, salt, pepper and garlic with 1/2 cup diced onion until soft (5-7 min). Set aside. Proceed with recipe as directed, adding the mushrooms after adding the cream cheese mixture (don't beat the mushrooms). WOW!! This was spectacular! Solved the very bland taste I got the first time.

The Best Vegetarian Chili in the World

Indeed the best vegetarian chili in the world! There's alot of room to customize, so here's what I did: Used 2 cans (28 oz) crushed tomatoes and 1 can fire roasted diced tomatoes; used all spices as listed and added chipotle Tabasco sauce to taste; only used 1/2 bag crumbles as that's all I had on hand. FAB-U-LOUS!!! Better each day is sat in the frig! Had portioned some out to freeze as it makes a TON of chili, but it all got eaten before any made it to the freezer! My vegetarian daughter ate it for lunch and dinner during her school break for 4 days in a row. Will definitely make again!

Ramen Noodle Frittata

Simple but yummy for a quick meal. Made this for my vegetarian daughter who really enjoyed it. Really is an open canvas, you could add anything you wanted, I added extra sauteed veggies. Will def make again (and again!)

Chocolate Chip Cheesecake I

By far THE BEST cheesecake recipe I have ever made, and I have been making cheesecake for over 25 years! I baked it using the water bath method which prevents the top of the cheesecake from cracking. I served it on Christmas day and my family loved it, everyone agreed it was the best ever!Will most likely be making it again in early January for my husband's birthday, it is sooooo good!

Christmas Brunch Casserole

This a a great basic recipe. I doubled the eggs as suggested by others, and generously seasoned the hash brown potatoes (which were basically chopped raw potato) before layering up the rest of the ingredients. Also, I ran the cooked bacon through the food processor, so it was chopped super fine. I added the cheese half way through cooking, otherwise it would have been burnt. It did not take one hour to cook, more like 45 min. I took it to work for a brunch, everyone loved it!

Pumpkin Wheat Honey Muffins

These were moist, but VERY sweet! I don't think it needs brown sugar and honey both. Next time I might try cutting back the honey to like 2 or 3 tablespoons. Also, I used dried cranberries instead of raisins (soaked them as directed) and they worked great.
