Chicken Parmesan

Reviewed: Sep. 5, 2013
Followed the recipe exactly, perfect! Used homemade tomatoe sauce, fresh mozzarella, aged provolone and Regganio parm. It didn't need any additional seasonings. Kids loved it and neighbors who came to dinner asked me to make it again the very next day. Every recipe I have tried from Chef John has been wonderful.

I found this recipe here several years ago and have been making it for football season ever since. It's definitely a winner, always rave reviews! Very simple to make too.

Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Jan. 26, 2013
Quick, easy and delicious. Followed recipe except added 2 14oz cans of petite diced tomatoes (one drained the other not) and about a cup of peas. I was concerned that the sauce was too thin but after pasta sat in it a couple of minutes it was all absorbed. My entire family loved it even my very picky eater (although she did pick out the tiny diced tomatoes). Thank you for a wonderful base recipe.

Best Chocolate Chip Cookies

Reviewed: Oct. 31, 2013
This is Chef John's "Amena's Triple Chocolate Chip Cookies" recipe posted several years ago, just doubled to make it appear different or maybe it's the other way around... Chef John suggests using three different chocolate chips (milk, semi, white) and I agree. Have been making these cookies for a couple of years and they are indeed the best chocolate chip cookies I have come across so far. Rave reviews and recipe requests whenever I serve them.

Nova Scotia Blueberry Cream Cake

Reviewed: Aug. 3, 2011
This was okay. Easy to make and looked great but not the best blueberry dessert I have ever made. Brought to a BBQ, some people loved it, some thought it was just okay. Folded in the blueberries as other reviewers suggested but I think I would have liked the layered "look" better if I had not.

Szechwan Shrimp

Reviewed: Jan. 7, 2012
Very easy and tasty recipe. Had some cooked shrimp I need to use up so I used them. However, when I make this again I will use raw shrimp and cook them up in the sauce. Just the right amount of spice as kids loved it too. I used fresh ginger and very glad I did...yum.

Cheeseburger Soup I

Reviewed: Mar. 1, 2013
Good base recipe. I followed exactly but it was just a bit bland. Really felt that it needed some diced tomatoes but since my girl doesn't like them I resisted the urge...seasoned with Goya adobe seasoning and black pepper, still not enough so I crumbled a cube of beef boullion into the soup, better. Don't get me wrong, it is good, but lacks the zip I would expect from a "cheese" soup.

Easy Beef Stroganoff

Reviewed: Sep. 20, 2013
Easy and good tasting. Kids loved it so that's a huge plus. I prefer more traditional Beef Stroganoff so only 4 stars...tasted like hamburger helper to me.

Hunts® Tomato and Bacon Tortellini

Reviewed: Jan. 16, 2013
So-so. Okay...I don't generally use canned tomatoes, processed cream cheese, pasta that is not homemade or frozen any vegetable, so I had to actually purchase the ingredients to make this dish. I did so thinking it would be a great go-to-very busy night kind of thing...and we are VERY busy! Yes, it is quick but really... kind of not good. Reminded me of my Hamburger Helper college days. Maybe my kids and husband are spoiled, half finished plates and "what's for desert" means I won't be making this again.

Best Ziti Ever

Reviewed: Sep. 26, 2013
Recipe is "okay" the way it is written but a few sight adjustments will make this simple dish really good. First, cook pasta only about 5 minutes and let the sauce (yes you will need more than what is called for here) soak into and finish cooking the pasta in the oven. Use 4-5 cups of a good sauce. Use 15oz Ricotta and add 2 Tablespoons of Olive Oil (go ahead and put the basil here instead of the sauce)and add about 1/3 cup parmesan to the mixture, forget the Italian seasoning expecially if you are using a good seasoned sauce. Increase mozzarella to taste but be sure to sprinkle the top with about 1/4 cup parmesan too. For those that complained about using several pots, simply use the pasta pot to cook the sausage after you have dumped the pasta out, then put the sausage aside and heat your sauce in that same pot. Still find it a bit bland? Add about 1/4 tsp of red pepper flakes to the sausage while browning. And yes, a pound of pasta, pound of sausage, over 3 cups of cheeses, plus several cups of sauce layered into a 9X13 pan is definitely going to make more than 4 serving...LOL...just read the recipes and do the math.
