Leftover Casserole

My husband LOVED it. We followed the recipe using ham. I did cook the noodles before I added them to the rest of the ingredients, and that worked great. I used cream of mushroom soup instead of cream of chicken, and I used half swiss cheese and half chedder, which added some additional flavor. My husband recommended crumpling potato chips on top for the last 15 minutes of baking, which turned out to be a nice touch. I will definitely make this again with whatever leftover meats I have. It was simple and delicious.

One Bowl Brownies

I really enjoy this recipe. I like to add twists. 1. Peanut Butter - a personal favorite - after making the brownie batter and placing it in the pan, mix 1 tbsp melted butter, 2 tbsp sugar, and 2/3 cup peanut butter. Then drops spoonfuls over the batter. Use a knife to "swirl" the pb into the brownie batter by "cutting" stripes in one direction, and then switch to the other direction. Bake as normal. 2. Cream Cheese - husbands delight - mix 8oz of cream cheese, 1/4 cup sugar, and 1tsp vanilla. Spoon into batter as described for PB. Bake as normal, might need to extend baking time by 5 minutes (use toothpick test).

English Toffee

After experimenting, here is what I figured out. The toffee turns out amazing if you do two things diffent. First, I used half the amount of butter that was called for. Second, when cooking with sugar, you have to wait for it to caramelize... that means that you should not stop cooking it until it turns into a light chocolate (toffee apple!) color that is thick and creamy. Then let it cool... it will start to harden right away. Be sure to take it off as soon as it turns the light brown color so that it doesn't begin to burn. Happy cooking!
