Eggplant Parmesan II
I'm not a big eggplant person, but this had really good flavor. Slicing the eggplant really thin helped cook it through better (I think at least). Used feta cheese instead of parmesan as well as fresh basil; it added really great flavor.

Creamy Cheesy Scrambled Eggs with Basil
A nice change to a simple breakfast dish! Love how fluffy they get and the basil adds tons of flavor.
