Mom's Coleslaw

I found this dressing bland and boring. I added salt and extra vinegar to give it a boost and it still wasn't great. I'm sticking with my tried and true dressing from now on!

Chorizo and Lentil Stew

This was simple and delicious! I added chopped onions (b/c I love them) and a couple peeled and chopped potatoes (to make it more of a one dish meal). I added one cube of a veggie bouillon to round out the flavors and didn't add any salt. I used 2 chicken chorizo sausages that were precooked (Aidelles), so I just diced them and added it in with the onions when I sauteed them. I added a touch more liquid than called for so it wouldn't be quite as thick, though it was still a thicker stew. Seasonings were basic and delicious! This one is going in the monthly rotation.

Mediterranean Pasta with Greens

This was pretty tasty! I chose it b/c my family eats gluten, dairy, soy, and corn free (child with allergies) and this recipe fit the bill, once I replaced the cheese with a vegan alternative. I used GF pasta, spinach instead of chard, and adapted the method a bit to make it saucier. I sauteed garlic in EVOO then added the chopped tomatoes and olives (I used all kalamata). Once those were warmed through, I added about a cup of white wine and let that reduce. Then I added about a cup, maybe 2, of veggie broth. I put the spinach on top, and wilted it down. Then added the pasta and stirred in the vegan parmesan. The result was a little saucy and delicious! I did find it needed a good bit of salt, probably b/c my 'parmesan' wasn't as salty as the real thing. Overall a tasty, simple dinner everyone liked - husband and kids included!

Quick and Easy Brownies

I reduced the flour to 1C, and it made a quick and easy 'light' brownie. Nothing I would crave, but definitely enough to give me my brownie fix. Took at least 45 minutes to bake, but that may have been my oven not being at temp.

Spicy Salmon with Caramelized Onions

This was great. I made it exactly according to recipe, but doubled the paste so I'd have enough for our larger pieces of fish. Delicious! My 'crust' didn't stay on during cooking, but the flavor was deep in the fish so that was ok. Will make again!

My Chicken Milano

I dredged the chicken in flour before sauteing it, which gave it a nice texture. This dinner was decent - not amazing but a good easy, pretty healthy standby, esp. for using up frozen green beans.

Yummy Cube Steaks

This was ok. I thought it could use some more flavor, it was just sort of bland and tomato-y. I'll try it again, but I'll use more seasonings. We served it over whole wheat penne, it was nice that it made sort of a meaty spaghetti sauce in the pan.

Southern Green Beans

Delicious! Made exactly according to the recipe (except I split the batch into two pots - with different varieties of beans from my garden - and so I eyeballed how much broth went into each - probably more than what was called for) and it was great. I wouldn't change a thing.

Banana Crumb Muffins

Editing this review b/c I made it almost exactly according to the recipe (used oil instead of butter) this time and it was just eh. It needs the vanilla, cinnamon, and nutmeg to give it some oomph. The muffins were plain and only mildly banana-y when made as written. The spices/vanilla really bring out the flavor in these muffins. ------ Delicious! Like others, I also added fresh nutmeg, cinnamon, and vanilla to the batter, and used oil instead of butter. I tried waiting until the last 5 min to add the topping, but my muffins had risen so much I couldn't really get the topping on evenly without it falling off the domed tops! So next time I will just add it on top of the batter before baking and let it melt in a little. Moist, kind of dense, and delicious. Will try a loaf next time and see how it slices & toasts the next day!

Kalua Pig in a Slow Cooker

This was the most delicious pork I have ever eaten in my life. I used coarse sea salt and a little more liquid smoke than it called for, maybe a total of 1.5T of both the salt and liquid smoke. Cooked on high for 7ish hours, DELICIOUS. Will try overnight next time. Which will be soon!

Bacon Wrapped Hamburgers

MMMMMM yum! Next time I won't bother with the bacon. I'm sure it is a must for people who love bacon, but it was hard for me to work with because the grease dripping from it as it was cooking kept flaming up the grill and my burgers got a little too charred. I think the burgers would be equally delicious without it, so will make it again with that modification.

Round Steak and Gravy II

Tasty and easy recipe! I followed the recipe except added some crushed garlic to the soup mixture. I cooked it in a large-ish roasting pan which, because of the size made a thin layer of soup, it cooked the liquid off so the gravy was super thick. I may actually add more water next time for a thinner gravy. Only 4 stars because it was a little salty for me (and I generally love salty stuff), and the meat was a little dry and overcooked after 1.5 hours. My meat said 'tenderized' on the package so perhaps that's why. Next time I'll cook 1 hour or less.

Taco Seasoning I

This was delicious. Made it exactly as the recipe called for, added it to 1lb of beef along with a little cornstarch and water to help it sauce up and stick to the meat, and it was amazing. Better than the packaged stuff, I'm never going back. Ever!

Yummy Bok Choy Salad

Wow this was delicious! I was skeptical, but it was great! I made it exactly as written, except with a full size bok choy (from my CSA box), and it was perfect. Next time I may up the amount of almonds, they were scarce. Mmmmm this salad was slightly sweet, crunchy, a little salty, fresh, and delicious! I served it alongside some fried tofu chunks with a peanut dipping sauce for a full meal.

Slow Cooker Spicy Black-Eyed Peas

Made this almost as instructed and it was delicious! I soaked the peas overnight, replaced the water/bouillon with chicken broth, and used all bacon (no ham). Reduced the liquid a little as I like my peas thicker, threw it all in the crock pot on low, and it was done in about 5 hours. We did NOT find it spicy though, so next time we'll double the jalapeno or cayenne, or maybe add andouille sausage in place of the ham. All bacon was a little too much bacon. Overall, delicious and easy!

Quick and Easy Chicken Noodle Soup

Easy and quick! To give you an idea of just how easy, my husband and I tag teamed this and made it when we both had the flu. He did some chopping, I did the sauteeing. Following others' recommendations, I first sauteed raw chicken cut into bite size pieces, in olive oil. When they were cooked on most sides, I added all the veggies (plus a couple cloves of chopped garlic) and sauteed it for about 10 minutes. Added 2 cartons of chicken stock plus 2 cups water. Simmered 20 minutes, added egg noodles (about 4 cups), simmered another 10, ate! It was a tad on the bland side, but that was good since we were sick and needed something that was easy to get down. That's why 4 instead of 5 stars. 5 for ease and quickness for sure!

Bacon Squash Saute

This is a great way to cook squash, though I didn't quite follow the recipe, in that I cooked the squash to near mush, like my mom used to make. The bacon gave the dish a nice flavor, and I topped with cheddar cheese. Delicious!

African Curry

This is a great 'base' curry recipe! Based on other reviews, I added potatoes as the onions and garlic sauteed. I increased the curry powder to 2T, added extra garlic, a dash of paprika, a sprinkling of cayenne and chili powder. I used 1 lb of boneless, skinless chicken breasts instead of the whole chicken. The last change I made was chopping a fresh tomato and adding it in toward the end. It turned out spicy (made my eyelids sweat) and pretty much delicious. Next time I'll try adding some carrots as well. Yummy.
