Chewy Chocolate Chip Oatmeal Cookies

These cookies are delicious...I took the advice of others and increased the flour to 1 3/4c, the baking soda to 1 tsp, and the salt to 1/2 tsp. I also used 1/2 cup pecans, and 1/2 cup walnuts instead of the full 1 cup walnuts. Subsitituted 1 cup butter flavored Crisco Baking Stick instead of Butter, so the flavor would still be there but with 50% less saturated fat. Baked them for 12 minutes at 335 deg. Used a mini ice-cream scooper and rolled into balls before placing on baking sheet covered with parchement paper. These are fantastic! Will definitely make again.

Fresh Strawberry Pecan Cookies

I knew these were more of a cake-like cookie ahead of time after reading the reviews and was okay with that. They had very good flavor. They were not overly sweet which is what we like in cookies. I used the mini ice-cream scooper to drop the dough so they were all evenly placed. I also cooked them on parchment paper because the first 2 batches got too dark around the bottom edges. I cooked them in the oven for only 10 minutes because I wanted a soft cookie vs. a crunchy cookie. The only downfall in this recipe was that the color was not the "pretty pink" I was hoping for. I read that someone had suggested using red food coloring to make the cookies appear to be more "pink" but I dont like adding artificial coloring to food. The cookies didnt spread and run like some reviews said, but maybe thats because I used the scooper so they were all the same size and not too big. My husband loved them and will definitely make again when we have extra strawberries to use.

Ground Beef Enchiladas

These were wonderful. I doubled the recipe because I was having company so instead of the fresh jalapeno pepper, I used 1 4.5oz can of diced jalapenos and 1 4.5oz can of diced green chilies. I also substituted sour cream instead of using the yogurt. Instead of mixing 4 cups of cheese inside, I used 3 inside and used the remaining cup over the top. I used flour tortillas and dipped both sides in enchilada sauce before filling, and sprinkled the remaining 1 cup of cheese on the top afteward. I did not use the remaining soup/sour cream/cheese mixure on top because it was plenty enough inside. I just used the 1 cup of plain cheese. My husband and father in law are AWESOME cooks and are the type that RARELY go out to eat because they are never happy with their food. Both of them RAVED about how tasty these were, and said they would definitely eat them again. Thanks so much for the recipe.
