Blueberry Bread I

Not bad! It was a little dry, but that problem was solved quickly with a smear of butter. It did stick to the bottom of the pan, though. I did as instructed and tried to take the bread out of the pan before it cooled, but it nonetheless broke apart. I quickly placed the part stuck on the bottom of the pan back on the loaf and it sliced pretty well after sitting with my "repairs" a few minutes. The taste was decent enough, but a little bland. I think it could use a little more depth of flavor, not necessarily spice, but perhaps a fruit addition? I have seen several recipes combining the berries with lemon, perhaps that would be something to try...

I prepared it in the microwave, and it worked just fine. I cooked it at 40% power for ten minutes, stirring every minute or so. After it cooled it was definately sticky but rollable. It tasted very good, although it was a little on the sweet side. For a quick candy it is definately worthwhile!

I never knew biscotti could be so easy to prepare! This recipe was very tasty, and I was pleased with how it turned out on my first attempt!!! The second time I tried it I used orange extract, and then added some chopped vanilla chips. I also drizzled them with some melted white chips at the end. A lovely presentation!

Gaye's Microwave Fudge

It is honestly not like traditional fudge in taste or texture, but it is tasty nonetheless and certainly worth the effort. For those who want something sweet in a pinch this works well.

American Girl's Peach Cobbler

I saw all the good reviews and thought this would be tasty and easy to prepare. Well, it was very easy. It pretty much tasted like bread and butter with mushy peaches stuck in it. Very disappointing, and a waste of ingredients. Ice cream didn't even help it taste better. Sorry...

Mock Tuna Salad

This is a quick, easy, and filling sandwich. I varied it to my own tastes (mayo only with chopped onion and dill pickle), and it was delicious! I found the suggestion from another reviewer to use a potato masher to mash the chickpeas worked VERY well. Even my tuna-hating boyfriend loved this. It doesn't remind me a whole lot like what I remember tuna to taste like, but that is a good thing!! :)
