Basic Pasta

It worked! We also shredded up some spinach and basil, wrung out all the water from it, and added it to the well when mixing it. You may need a bit more flour in this case. To make pretty pasta without a machine: roller pin your dough out into a circle, let it dry for 30 mins, then roll up the circle into a big cigar and then cut across the roll with a sharp knife. Thinner slices for spaghetti, thicker slices for tagliatelle.

Baklava

Tasty, but the top of my baklava got all messed up when I went to serve it... also, I think that might have been too much syrup sauce.

Irish Lamb Stew

Next time I would reduce the bacon to 7 oz and I only used 2 lbs of Lamb, but you would be ok with 1.5 lbs. This would bring the cost down and decrease the fat.

Jalapeno Strawberry Jam

Absolutely fantastic. I upped the jalepeno after a taste test in the pot. I reduced the recipe to make just 1 jar, but after tasting I know I should have made dozens for christmas gifts.

Soft Oatmeal Cookies

I followed the recipe, but I added in a cup of mixed: raisins, almonds, and coconut...I regretted following some of the suggestions, like not pressing it down with a fork, because the balled walnut sized version didn't cook up properly on my oven. Burned bottoms, raw interiors. Next time I would follow the sugar with the fork suggestion.

Potato Latkes I

So good... I added scallions in and made 5" size latkes, and used the recipe for jalepeno strawberry jam on this site as a topper, plus a quick swirl of whipcream... sooo tasty.

Chicken Parmigiana

Great. We moved the oven rack up to the top when it came close to serving so that the cheese could brown a bit. I might use less sauce next time, ala a chicken parm sandwich.

Spicy Sweet Potato Soup

Great, I overdid it on the ginger, added a whole clove of roasted garlic and my boyfriend was like: "WHOA! That will cure your cold!" We added in tomato chunks to the soup when it came out a little watery, they were a big bonus for people who might not like the 'puree texture'.

Moroccan Meat Cigars

My boyfriend said it was the best thing I ever made. I used lamb instead of beef. After browning and draining fat from meat, I added 1 Tbsp of each of the spices, used 2 oz of tomato paste instead of chopped tomatoes, slowly stirred in about 1/2 to 1 c water as needed to help form a dense stew mixture, let it simmer open for a while to let the spices infuse, and then followed all the other directions. One thing the recipe didn't mention, was that as you roll the phyllo dough, you want to fold the ends in as you turn the cigar, that way your meat mixture wont spill out, and it looks nicer. Came out awesome, made 10 cigars, they were pretty big.
