Fried Rice with Cilantro

Very flavorful! The chiles make it a bit spicy, but you could definitely leave them out.

Company Couscous

This is ok, but a little bland. Since there's not an overpowering flavor in it, it makes a good side. Would go well with something spicy because it would absorb the spice and cleanse the palate. Not hard to make at all.

Mushroom Chicken Piccata

Surprisingly simple to make! This turned out to be much more delicious than I thought. Made this with chicken tenderloins and that cut the cooking time down a lot. By the time the broth and wine were added to the pan, the chicken was cooked, so it was just a matter or waiting on the sauce to thicken, which didn't take 25 minutes like it said. Delicious and simple! Would make a good romantic meal.

Chicken and Apple Curry

This was a little bland, so adding a good bit of salt of salt is necessary. Or, if you don't like the idea of consuming a lot of salt, add more apple for sweetness and more onion for flavor. I also think garlic would be good in this. It could've used a little more curry powder. Produced very moist chicken and was fairly easy to make. My parents did not like this, but I thought it was a welcome change to plain chicken. Healthy, too!

Restaurant Style Chicken Nachos

When I made this I was a little short on the salsa, so the chicken came out a little dry. The garlic and onions and tomato definitely make this good! This is a good method that can be changed up to fit your favorite nacho toppings. It really only needs baked long enough to melt the cheese. Could probably achieve this in the microwave. I'm going to try that next time.

Crab Dip

I made this for my boyfriend. He's a crab-lover, as am I, and we've had several crab dips in our time. We both approve of this version! Great for any crab lover. If you want the crab to be more prominent, leave out some of the cream cheese or add some extra crab. I used Miracle Whip instead of mayonnaise, but it had a weird sweet taste, so I would recommend the mayo. I added Worcestershire sauce and paprika to this. I also replaced a little less than half the cream cheese with mozzarella and cheddar cheese. Added great depth of flavor! I think with just cream cheese it would've been too thick. Because I was cooking other things at the same time, I had the oven a little higher and didn't cook it for quite as long. I topped it with some cheddar cheese, and baked it uncovered until the last 10 minutes, when I took the lid off to allow the cheese to brown.

Cyndi's Shrimp Fajitas

Pretty good, but I'm not a huge fan of shrimp in fajitas and tacos, etc. The shrimp were very well seasoned and I like the addition of the corn in the mix. I added some sour cream to my fajita. We also didn't use a red onion, we used a white onion, which didn't make a huge difference.

Delicious Deep Fried Pickles

Love these! They taste just like the ones you get at restaurants. I used pickle slices rather than spears because they make crunchier fried pickles and they're easier to eat. When you make the slices there is a lot of the bread crumb coating left over, so it might be a good idea to reduce that part of the recipe. Also, it seemed like there was an awfully lot of milk added to one egg. Less than a cup of milk would probably suffice. I'm going to try these changes next time. I served them with thousand island and it was great! I like ranch, too!
