The Ultimate Chili

I made this without changing anything and we both loved it. And my girlfriend is a picky eater! I have a good vegetarian chili I make but from now on, this is my go to recipe.

Baked Cream Cheese Wontons

Very easy to make, but I need to work on what to add to them. Tried crab, (not enough crab flavor) chives,(same)and chopped bacon,(some people loved them, some not). But will def make them again. And btw, wonton wrappers are in the produce section. Duh, who knew? Best right out of the oven, but warmed up last night for a Christmas eve gathering I had to turn them over to crisp up the bottom.

World's Best Potato Soup

Being a big fan of potato soup in winter I tried this one. Excellent!!! As is. Kept the potatoes unpeeled because we like them better that way. I didn't saute the vegetables so there would be more texture. And yes after cooking it was a little soupy, so I lightly sprinkled in some potato flakes and it was perfect. I've tried other recipes here and the only other potato soup that's equally delicious is the Slow cooker easy potato soup. Different, but still killer good. I'm finished trying other recipes, these two are all I'll ever need.

Meatloaf in a Mug

Genius! I am very surprised how well this worked and I wasn't going to say anything if it didn't but I will definitely do this again. First, if it would work in a mug I thought why not a small baking dish. (corningware)I was worried about the fat at the bottom so I made an elevation platform punched with holes out of a stiff curved paper plate, but will be looking to replace that with something from BBB maybe. (not metal) All the fat went to the bottom and I just lifted the loaf out easily. Changes I made: 1 lb of chuck, rather than deal with chopping onion, grn pepper, using ketchup, this is supposed to be easy and fast so I borrowed from another recipe here and added a half a small jar of medium salsa (which has all those things in it)and an egg to the mixture. Everything else was the same, total cooking time was 9 minutes on 70%, 4 minutes in broiler to get the perfect bark on top and a splash more of salsa. I saved at least an hour and it is delicious, firm and sliceable. Thanks grl2005!

Loaded Cauliflower

This was ok, but a little disappointing. It looked just like the pic and did have flavor, but I'll have to work on it to jazz it up some. The only thing I did differently was add some chopped bacon I had in the fridge. Glad I did too! I'll try it again with some green onion, more bacon, and more cheese. That kind of negates the healthy aspect of this but as a base it was solid. Very easy and well, my wife and I did eat all of it...Oh, and it doesn't need to be mashed, just broken up.

Easy Tuna Casserole

Simple. Tastes good. My wife hates cooked tuna...she had two bowls with tabasco. (She uses that stuff like it's going out of style) Yeah, I'll play with it next time, peas sound good, or adding some flavors. It's better than what I remember Mom making 30 years ago.

A Firefighter's Meatloaf

First, this was really good as is. My wife said, "Don't get a big head, but this might be the best meatloaf I've ever had." She doesn't like meatloaf or ketchup so that's saying something. Here's what I changed, no bbq sauce (seemed weird but I'll try it next time), added some breadcrumbs to the wet bread, and because we looked at each other and said in unison, meatloaf with no egg?, I added one. Delicious but still fell apart trying to slice it. So next time, TWO eggs, breadcrumbs and no wet bread, the moisture in the salsa was plenty to keep it moist, more green pepper and maybe hot salsa. New go to meatloaf so I'll make this over and over, with those tweaks. And I'll consider doubling it because this won't last through lunch tomorrow.

Tamale Casserole

Just made this last night and it was great! Used diced white onion and 1 can of chili w/beans cause that's what I had. One good tip from another reviewer...definitely go with a 3 quart dish, this makes a lot. Some spanish rice as a side was perfect. My goal for a couple of weeks is to make something with what I have already so, success!

Slow Cooker, Easy Baked Potato Soup

Great. Only real problem was I didn't make enough. Every single person went back for more, and there wasn't any left over for lunch the next day. So I'll double it next time. My wife asked me to please make it again soon!
