Creamy Pumpkin Pie

This was very good... I followed the advice of other reviewers and added only 2 cups of pumpkin... it filled a 9" deep dish perfectly. Also, since I don't really care for regular pie crust, I used a graham cracker crust instead. It was delicious!

Chuck's Come On Ice Cream (or Night of the Red Death) Chili

This made a HUGE pot of chili (I also added 4 cans of pinto beans and 1 can of black beans 40 min. before end of cooking time) that I took to my family potluck. I was worried about having lots of leftovers since we also had turkey, chicken, steaks, and numerous side dishes... to my delight, by the end of the potluck everyone was raving about the chili, and there was less than one small bowl left in the bottom of the pot! Thanks so much for this unbelieveably tasty recipie. From now on, this is definitely my chili of choice :)

Honey Glazed Ham

Loved this! I didn't have whole cloves, so I just put 1/4 t ground cloves in the glaze, I substituted brown sugar for corn syrup, and added 1/4 c pineaplle juice. I also cooked my ham in a smoked porter beer (sugessted from another recipe on this sight) and kept the cover on until the very end and then took it off and let it carmelize. It was out of this world! This will be the only way I will prepare ham from now on.

Bone-In Ham Cooked in Beer

I made this w/ a spiral ham, and it was DELICIOUS! I've never had such a tender, juicy ham. I used Alaskan Smoked Porter, which was a perfect compliment. I also used a glaze (I wasn't completely convinced that just the beer & pineapple give enough flavor) of 1 cup honey, 1/4 cup brown sugar, 1/4 cup of pineapple juice, and 1/2 teaspoon ground cloves. I brushed on the mixture every 15-20 minutes, and removed the cover at the end to carmelize the glaze. The drippings even made a delicious gravy! Everyone loved it... from now on, I will always cook my ham in beer.

Cream Puffs

These were sooooo unbelievably good and EASY! I used white chocolate pudding mix, and added 1 t. vanilla. I whipped the filling for several minutes, which made it very fluffy and smooth. I also added 1 t. vanilla & 1 t. almond extract to the puff dough. I used a chocolate glaze on the top, & these tasted just like mini eclairs!

Asparagus Cashew Rice Pilaf

I really liked this a lot. I used pine nuts instead of cashews, and it really complimented the flavor. I also added fresh ground pepper and freshly grated parmesean cheese after cooking. YUM!

Mini Meatloaves

Awesome Carrot Cake with Cream Cheese Frosting

I made this cake for my fiance's birthday (carrot cake being his favorite) and it was DELICIOUS! However, he doesn't like pineapple so instead I used 1 cup of applesauce, and reduced the oil to 1/2 cup. It turned out incredibly moist! Also, I loved the frosting... it was perfect.

Impossible Pumpkin Pie

I baked this pie and it turned out more "cake-like" in texture, just as others had mentioned. However, when we ate the leftovers the next day, it had much more of a pie consistency, pretty much like regular pumpkin pie without the crust. If I made this again, I would definitely prepare it a day ahead of time.

Frozen Pumpkin Pie

So good, and so different! A great twist on the traditional pumpkin pie. I brought it to my family's thanksgiving dinner, and everyone loved it. This one is definitely a WINNER!
