Cherry Chicken Salad

Grilled Marinated Shrimp

Shrimp is not usually my first choice on a menu, but I made this for Mother's Day, and it was fabulous! No only is the marinade good on shrimp, but also on scallops. I emulsified the marinade in a blender to make it a creamier consistency. This will be a regular recipe this summer. Thanks!

Bread Machine Bagels

This recipe is fantastic! I increased the water to 1 1/8 cups as suggested by other reviewers. We love Panera Asiago Cheese bagels, so I added 1/2 cup shredded asiago cheese to the dough, shaped them, let them rise for 30 minutes (great tip!), boiled them, then topped each with a little more shredded asiago cheese. My husband said if he didn't know I made them, he would have thought they came from the bagel shop! Since the original recipe made 9 large bagels, which are pretty big, I made them again, and divided it to make 12. They were a little smaller, but a better portion for us. I'll be making this recipe again and again!

Bran Muffins I

Great recipe! Very moist and delicious. Taking a tip from another reviewer, I used 6 cups of All-Bran cereal and 1 cup of plumped raisins (SunMaid baking raisins) instead of the 2C raisin bran and 4C whole bran cereals. I also substituted SplendaBake for the white sugar to reduce the calories, and no one in my house could tell the difference. This recipe makes a lot of muffins, which freeze well.

Rum Cake II

This is delicious! I was out of rum extract, so I substituted dark rum, and it worked great. I added pecan halves to the pan before pouring in the batter, which went well with butter and rum flavors. It disappeared quickly, and I had several requests for the recipe. I will definitely be making this cake again!

Chicken Pesto a la Lisa

I made this using very little of the feta cheese. I thought it would be way too salty for us if I added the entire amount, and I was right. I gave it 5* with the elimination of the feta cheese. Next time I make this I won't use the feta at all, as I think it tastes better without it. This is a beautiful dish to serve.

Mango Tango Black Bean Salsa

Margarita Cake

Great recipe! I don't like orange or lemon cake mix (also thought it wouldn't taste like a traditional margarita), so I used a white cake mix, and added 2 teaspoons of orange extract, then followed the remaining instructions. I took some to work, gave some to the neighbors, and my husband and I ate the rest. Everyone wanted the recipe! I am making it again this weekend for a Cinco de Mayo party, but will use lime juice in the cake this time, as others have suggested. Thanks, Carol, for a great recipe!

Chicken and Wild Rice Casserole

This casserole is delicious! However, some wild rice mixes take a while to cook (at least mine did). When I make this again, I will prepare the chicken and rice a day ahead of time, so I can quickly put it together after work. Otherwise, I will prepare it on the weekend when I have more time. I did put the chicken, onion, celery, water, wine and seasonings in a crock pot when I came home for lunch. However, my wild rice took at least an hour to cook. I ended up mixing everything together before the rice was done, and it finished cooking in the oven. We had a late dinner, but it was worth waiting for!

Roasted Italian Herb Chicken

Very simple and extremely delicious! I love Good Seasons Italian dressing mix using balsamic vinegar instead of the cider vinegar; it's the only Italian dressing we eat. I used it to marinate the chicken for about 3 hours, and my husband raved!

Blue Cornmeal Pancakes

I had some excess cornmeal that needed to be used, and found this recipe in my search. I substituted white cornmeal for the blue, increased the sugar to 2 tablespoons. Once mixed, the batter was pretty thin, so I added another half cup of flour. With the adjustments, these pancakes were quite delicious!

Tomato Florentine Soup I

This was so easy to make, and so delicious! Instead of adding cooked pasta to the soup, I added a cup of uncooked ditalini about 10 or 15 minutes before serving. My husband loved it!

Enchiladas Suizas

The first time I made this I followed the recipe closely. I substituted flour tortillas for the corn, and I used non-stick spray to fry the tortillas, since they seemed to absorb the hot oil. I also saved time by using 2-4oz cans of chopped green chiles. They were to die for! Then I made it again, and increased the chicken to 3 cups and used light cream instead of the heavy cream. They were fantastic again. Wonderful recipe! Thanks for sharing.
