Chimichurri Sauce

This was the hit of our 4th of July cookout. Folk were using it for a dip as well as on top of their meat, grilled Brazilian style. I upped the garlic to 2 TBSP and I trimmed the parsley stems.

Taco Seasoning I

Perfect. I use this with 93/7 ground turkey and it turns out great. I tweak it every once in a while, with a little more of this or that, but it's a solid seasoning mix.

Mystery Ingredient Wild Blueberry Pie

Almond extract makes almost any pie better. :D Seriously though, this is a wickedly good pie. I modded it myself by using a lard-based homemade crust, which made it so flaky the pie nearly crumbled if you even looked at it the wrong way.

Garlic Prime Rib

I made this for Christmas Eve dinner. I had to modify it a little bit, as I used only a 3 pound, boneless roast. I kept the same measurements of the ingredients, despite the smaller size and it still turned out very well. It probably served 6-8 adults (we had 4 adults, with leftovers for Christmas). One thing that I did differently was to allow the roast to sit uncovered overnight in the refrigerator to dry the meat. This helps keep the juices inside during cooking. Some people sear the roast, but air drying does the same thing and with better results in my opinion.

French Silk Chocolate Pie

I have been looking for this recipe for almost 20 years. It was someone's 'secret' recipe that they refused to give me, but I recognized it the minute I saw it. This is why they invented the Internet. This pie is divine, easily one of my favorites. However, it is super rich, so you need to invite people over to enjoy this with you. Last time I made it I used Giradelli baking chocolate, but it's pretty much the same.

Broiled Tilapia Parmesan

Awesome. My wife made this tonight and I wanted to eat the whole plate. She omitted the celery salt, as we were out of it, but I am not sure I would have liked it as much with the celery salt. Yum!

Buffalo Chicken Dip

My wife made this and it is the bomb. She used fresh, free range chicken breasts and pureed (on accident) instead of chopped, and it came out great. Excellent with just celery, chips, or by the spoonful.
