Kyle's Favorite Beef Stew

My husband absolutely loved this recipe. I left out the mushrooms because I didn't have any. I added the wine to the skillet to pick up drippings then added to the slow cooker. I think I may add more garlic next time; I felt it was missing a little something.

Tantalizingly Tangy Meatloaf

Excellent! I could've eaten the whole thing. Per others comments that the meat itself was a little boring, I added some red onion, red pepper, extra garlic powder, and a spoonful of the apricot preserves. Also used panko breadcrumbs. Poked holes in the meatloaf before pouring sauce over.

Mama Bear's Porridge

My 3-yr old asked me to make her porridge like the 3 bears ate in Goldilocks, so I found this recipe and made it for her. I didn't think she'd eat it, but she really enjoyed it and so did I! I did add a little brown sugar since I like my oatmeal sweet.

Kaese Spaetzle

First attempt at making Spaetzle and it turned out pretty good. I wish the directions stated how the dough should look before letting it sit since 3/8c of milk is an odd measurement. I ended up adding more flour after it sat because it was pretty runny and was still runny when I pressed it through the potato ricer. The ricer worked pretty well except the dumplings clumped quite a bit. Next time I think I'll use a ziploc bag with a hole in the corner as another reviewer suggested. I sauteed the onions in bacon grease (using the bacon for the German-style Green Beans recipe on this site) then added the spaetzle. I didn't shred my Emmenthaler, although I wished I had. I cut in very small chunks hoping it would melt well, didn't. My husband loved it especially when combined with the Bohemian Pork Roast on this site. When the 2 are put together, it's a better taste than either on it's own!

Roasted Brussels Sprouts

Chocolate Cut Out Cookies

These turned out great. But PLEASE roll in cocoa powder/confectioners sugar as well as chill in fridge to get the right consistency. I made hearts and they held up perfectly and tasted so good. I also used only 2 eggs instead of 3.

The best after a few little changes...beer instead of water (I used Heineken), more tomato paste, half sugar, a half measure more of the spices, cider vinegar instead of white, and softened the onions and peppers before adding to beef.

Indian Chicken Curry II

EXCELLENT! Better than the restaurants I've been to. Whole family raved over it. Took the following suggestions from other reviewers: doubled sauce, added heaping tsp of garam masala, used vanilla yogurt (1/2c-3/4c instead of 1c) and left out sugar, added a little more coconut milk, used lime instead of lemon, used curry paste (6-8 Tbsp) instead of curry powder, and used Indian Chile powder in place of cayenne. Served with Indian Rice (Pulao) and Pakistani Spicy Chickpeas (both recipes on this site) as well as store-bought naan. We will be eating this often! Thanks for the recipe Amanda!

Chicken Suiza Cornbread Bake

Waaaayyyy too much corn! Next time I will leave out the whole kernel corn. I really enjoyed the bites I had without the corn so I will try this again and see how it turns out.

Baked Spaghetti with Chicken

I really did not care for this dish. To me, the flavoring of the chicken just didn't mesh well with the rest of the dish. Maybe if the chicken was sauteed with garlic and onions, it would be better? I don't plan on trying to find out, though. I think I'll just stick with ground beef for my baked spaghetti.

Chicken Massaman Curry

The fish sauce is much too overpowering! Could 3 Tbsp really be the correct measurement? I ended up having to run out to get another can of coconut milk and doubling other ingredients (besides fish sauce and tamarind paste) to tone it down. It still wasn't great, but it was edible. Pretty disappointed as I love Masaman curry, but I will try it again and significantly decrease the fish sauce. I added strips of vidalia onion and used 2 white potatoes and 1 sweet potato. Very glad I did that as it helped with the flavor. Also decreased the PB to 1/4c and added 1/4-1/3c roasted peanuts. I forgot to add the lime juice so I can't comment as to whether that measurement seems off as well according to other reviewers.

Mom's Buttercream Frosting

Awesome with cocoa powder. I didn't measure, just put eye-balled it. When making the flour/milk mixture, I took others' advice and put the flour in first then slowly stirred in milk. For me, it was still really lumpy; but after cooling it, I beat it for about 5 minutes and that smoothed it out. Next time, I will put the milk in first then slowly whisk in sifted flour. No gritty texture since I beat the butter and sugar for over 5 minutes.

White Chili with Ground Turkey

I was unsure about the oregano as I prefer to keep that particular herb in Italian dishes, but it wasn't bad. Next time, I will leave it out and add coriander and/or curry powder. I did decrease the chicken broth to one can and added 1/2-1 c white wine. Good chili, everyone enjoyed it, including 5yo & 2yo.

Extra Easy Hummus

Mmmmm! Added a little Sriracha, peanut butter and ginger. I forgot to save the bean liquid so I thinned it out with chicken stock. Also added the juice from a half of a lemon.

Finger Lickin' Onion Dip

Really yummy! I left out the goat cheese, but wish I hadn't as it needed the salt. I subbed 1c of the sour cream with greek yogurt. Also, diced the onion instead of slicing and added cumin. So much better than store bought or out of the packet!

Brooke's Best Bombshell Brownies

Ummm, YUM!!! BIG hit in our house! I did decrease the sugar per other reviewers and use both brown and white (1 1/2c brown & 3/4 white). The first time I made these I used milk chocolate chips since I had a bag I needed to finish up; they were good but had a slightly different taste that even my hubby picked up right away. The next time I made them, I used the semi-sweet and WOW! SO GOOD! I do melt my chips in the butter because I don't like chunks of chocolate in my brownies (weird, I know).

Juicy Roasted Chicken

I didn't have margarine, so I put some butter in the cavity and then rubbed olive oil on the outside. Also put onion, garlic and half a lemon inside the cavity; stuck garlic slivers under the skin; and basted with sherry.

Easy Dump Cake

Taco Cornbread Pizza

Really good and super easy! As per other reviewers: made in 13x9, spread refried beans with fresh cilantro and lime juice over crust, and added sour cream and taco sauce. I was afraid how it would turn out, but it was great.
