Super Squash

Reviewed: Aug. 12, 2006
This casserole was awesome!! Even my husband who's not a fan of squash ate at least 1/2 of a 9x13 dish. I added more cheese and used Clubhouse crackers instead of saltines. Thanks for the recipe!!

Pumpkin Chili

Reviewed: Aug. 12, 2006
I love this chili! I used a 15oz can of pumpkin, added 1 tsp cumin, and a diced jalapeno. Also took advice of other reviewers and cut down sugar to 2 Tbsp. Big hit with everyone.

Vegetable Whip

Reviewed: Mar. 23, 2007
Pretty good...took advice from other reviewers- used yukon golds, put chicken bouillon granules in water and used evaporated milk. Hubby thought it was a little bland, I should've added sour cream. You really need to cook the carrots well; I thought I did, but carrots didn't whip up. I think next time I will leave out onion as some didn't whip up either and kind of ruined the texture.

Indian Chicken Curry II

Reviewed: Aug. 13, 2007
EXCELLENT! Better than the restaurants I've been to. Whole family raved over it. Took the following suggestions from other reviewers: doubled sauce, added heaping tsp of garam masala, used vanilla yogurt (1/2c-3/4c instead of 1c) and left out sugar, added a little more coconut milk, used lime instead of lemon, used curry paste (6-8 Tbsp) instead of curry powder, and used Indian Chile powder in place of cayenne. Served with Indian Rice (Pulao) and Pakistani Spicy Chickpeas (both recipes on this site) as well as store-bought naan. We will be eating this often! Thanks for the recipe Amanda!

Excellent served with Indian Chicken Curry II. I used basmati rice instead of white rice.

Kyle's Favorite Beef Stew

Reviewed: Nov. 28, 2007
My husband absolutely loved this recipe. I left out the mushrooms because I didn't have any. I added the wine to the skillet to pick up drippings then added to the slow cooker. I think I may add more garlic next time; I felt it was missing a little something.

Spicy Butter Cookies

Reviewed: Dec. 2, 2007
These were pretty good. My husband didn't care for them at all. I added an extra 1/2 tsp of nutmeg (per other reviewers) and wish I wouldn't have. I did use both brown and white sugar which I think was a good call. Worth a try.

Teena's Spicy Pesto Chicken and Pasta

Reviewed: May 19, 2008
Excellent dish with the following modifications: saute onion and garlic with chicken and chile paste (make sure to use the paste!); add strips of sun-dried tomatoes; add splash of white wine and cream/half & half/whole milk; toss in some toasted pine nuts at the end; and do NOT forget the goat cheese at the end, it makes all the difference. As good as this is hot, it's even better next day cold. This has become a staple recipe and fun to play around with.

Wow! This was awesome. Didn't have bread flour so used regular. Also took suggestions and added garlic powder and Italian seasoning. This will be my standard pizza dough recipe!

Taco Cornbread Pizza

Reviewed: Feb. 16, 2009
Really good and super easy! As per other reviewers: made in 13x9, spread refried beans with fresh cilantro and lime juice over crust, and added sour cream and taco sauce. I was afraid how it would turn out, but it was great.

Emily's Famous Sloppy Joes

Reviewed: Feb. 16, 2009
The best after a few little changes...beer instead of water (I used Heineken), more tomato paste, half sugar, a half measure more of the spices, cider vinegar instead of white, and softened the onions and peppers before adding to beef.

Chocolate Cut Out Cookies

Reviewed: Feb. 16, 2009
These turned out great. But PLEASE roll in cocoa powder/confectioners sugar as well as chill in fridge to get the right consistency. I made hearts and they held up perfectly and tasted so good. I also used only 2 eggs instead of 3.

Chicken Massaman Curry

Reviewed: Mar. 12, 2010
The fish sauce is much too overpowering! Could 3 Tbsp really be the correct measurement? I ended up having to run out to get another can of coconut milk and doubling other ingredients (besides fish sauce and tamarind paste) to tone it down. It still wasn't great, but it was edible. Pretty disappointed as I love Masaman curry, but I will try it again and significantly decrease the fish sauce. I added strips of vidalia onion and used 2 white potatoes and 1 sweet potato. Very glad I did that as it helped with the flavor. Also decreased the PB to 1/4c and added 1/4-1/3c roasted peanuts. I forgot to add the lime juice so I can't comment as to whether that measurement seems off as well according to other reviewers.

Tantalizingly Tangy Meatloaf

Reviewed: Jun. 30, 2010
Excellent! I could've eaten the whole thing. Per others comments that the meat itself was a little boring, I added some red onion, red pepper, extra garlic powder, and a spoonful of the apricot preserves. Also used panko breadcrumbs. Poked holes in the meatloaf before pouring sauce over.

Baked Spaghetti with Chicken

Reviewed: Jul. 10, 2010
I really did not care for this dish. To me, the flavoring of the chicken just didn't mesh well with the rest of the dish. Maybe if the chicken was sauteed with garlic and onions, it would be better? I don't plan on trying to find out, though. I think I'll just stick with ground beef for my baked spaghetti.
