About this Cook
I love cooking! What more do you need to know...
My favorite things to cook
BBQ Ribs, BBQ Pork Shoulder, BBQ Anything, Jambalaya, Red Beans & Rice, White Beans, Beer, Stir Fry, Borscht, Pickles, Bread, Apple Pie, Pies, Chilli, Egg Dishes, Fish, and lots more! That's a list of favorites and staples, but I really enjoy cooking new things. I truly love exploring new foods and cultures. Without the money to travel the country and globe sampling foods and cultures I joyfully use the internet to bring those cultures and their foods to my family's table.
My favorite family cooking traditions
At Thanksgiving we have BBQ ribs rather than the traditional turkey.
My cooking triumphs
I've made beer, wine, mead... all very good and a truly satisfying yet challenging process.
My cooking tragedies
hmmmm.... nothing I can think of which probably means nothing very recently... but it aint all perfect I can assure you!!!

Favorite Chocolate Peanut Butter Cookies
Very nice recipe. I've tried 2 chocolate cookie recipes previously and while neither was bad neither was worth remaking. This recipe is a keeper. I grabbed butterscotch chips rather than peanut butter chips by mistake and subbed 1/4 cup flour with 1/4 cup oats(to add a little texture), otherwise followed the recipe. It's a bit sweet so I added almost 1/4 cup flour to the remaining 1/3rd of the batch which improved it. The butterscotch chips are far too sweet and attributed much to the over-sweetness. These are wonderfully tender cookies with a wonderful flavor. Good stuff, deserves 4.5 stars or a 9 out of 10 rating by me. Very nice cookie. Almost forgot for added interest I sprinkled just a touch of salt on top of some of the cookies (less than 1/8th tsp for approx 24 2.5" cookies). It was a nice surprise ... salty and sweet chocolate. Hey, they're not health food!

The Best Thai Coconut Soup
Just like my fav. Thai place makes it. Well except that I substitute a couple chicken breast for the shrimp. Wonderful stuff.

Curried Coconut Chicken
Wonderful recipe, perfect as is. However I excluded the tomato sauce in lieu of 2 tablespoons ketchup. I just didn't want that much tomato influence in the dish. Also I used McCormick brand red curry powder. Love that curry powder. Again, great dish, wonderful.
