Libby's® Famous Pumpkin Pie

I hate pumpkin pie. This pumpkin pie is the first pumpkin pie in the history of pumpkin pie that I have not hated. In fact, I enjoyed it. IT RULES.

Chantal's New York Cheesecake

Who knew a cheesecake could be so easy? With 1 recipe (12 servings) I made 2 separate cheesecakes in the store-bought graham cracker pre-made crust pans. Same cooking time, but you will definitely have a lot of leftover batter. I'm definitely NOT a cheesecake fanatic. I could generally take it or leave it, if there are other dessert options (love me some cobbler) available, but this turned out much, MUCH better than any other pre-made or restaurant cheesecake I've tried. I'll definitely make it again!

Campbell's® Green Bean Casserole

Eh... it was okay? The problem for me is that I've never actually tasted a green bean casserole, as my family never served it at any functions or festivities. Maybe if I'd grown up with this dish, I'd love it like my husband does. I followed the recipe exactly, but I feel like using Campbell's is probably not as good as a more made-from-scratch approach. Nonetheless, I'll keep it on file. My husband says he liked it.

Pie Crust IV

I normally avoid making pie crust, because I hate how complicated it can become with certain recipes. Some require that you use freezing water (with an actual layer of ice), that you place the crust in the refrigerator for some time, etc. Plus when it comes to made-from-scratch vs. store-bought, I feel like the crust is the least important part of the pie. Most people just want the filling. That said, I ran out of pre-made crusts this Thanksgiving, and had to make a from-scratch crust. This was the EASIEST recipe I've ever used, plus it was tasty and had a nice texture. This is now my default crust recipe!

Easy Iced Coffee

I'll admit that I'm very spoiled with my normally organic, cold-press coffee (if you love iced coffee, look up 'cold press toddy' on amazon and buy one for yourself- they will change your life), but this was straight up nasty. Straight up nasty.

Grandma VanDoren's White Bread

My husband really enjoyed the bread, as did our housemates who pretty much depleted our 3-loaf supply. If I make it again, I'll be hiding the bread so the housemates don't eat it all :p This was my first attempt at bread baking, and it was easy! I'll definitely be experimenting with different types of breads. I did notice a strong, yeast-y sort of taste, which probably comes from the fact that I've never eaten fresh-out-of-the-oven-made-from-scratch bread. Still, for the yeastiness, I rate this a 4-Star recipe. I also used regular flour, and had no trouble. Spread a little garlic powder and some butter shavings over the top before baking for a nice, savory bread.

Pork Chops with Mushroom Onion Gravy

My husband and one of our housemates tried this, and both loved it. I decided to forego the onion and, instead, added 3 slices of pre-pan fried bacon and drippings. This is very similar to a recipe my mom made when I was a kid, and I was hoping I'd find something similar (she never wrote it down). So far, this is the closest thing I could find. Thanks so much.

Brown Sugar Meatloaf

Me: "how many stars should I give this?" Husband: "FIVE." We used half an onion, and used Ritz brand sour cream & onion crackers instead of saltines, then crumbled some extra crackers onto the brown sugar/ketchup mixture at the bottom of the pan to help soak up the oils. Amazing! The brown sugar was perfect, but not overpowering. it was sweet, but subdued. It was delicious. Even our 23-year-old housemate who 'hates meatloaf' loved it so much, he wanted some of the leftovers the next day (which make great sandwiches with a slice of your choice of cheese on any bread- we used biscuits). Normally, we eat really strict, so this was a great treat.
