My Name is Danielle and my Screen name is a play on my initials which is DRMR.
I love to cook, especially for my parents who are diabetic. I strive to give my parents all their favorites while still maintaining their low sugar and low sodium diets.
Because both my parents are diabetic I also have made big changes in my life to help give me an edge on preventing diabetes for myself.
I love baking, breads, cakes, cookies, all of it. I love almost anything with garlic and onions in it because I think a little bit of either or both just give so much flavor. I am trying also working on my grilling recipes so I can experiment a little more.

My cooking triumphs
The first time I ever made Chicken Pot pie it took me forever because I was baking for so many people. It took me 3 hours straight of standing in the kitchen rolling dough and making sure my chicken didn't over cook. It was tiring, but so worth the satisfied faces. My friends kept telling me, "Omg this is the most amazing Pot Pie. You have to make this again."
When my mom first found out she was diabetic, she was so depressed because she had just started menopause and couldn't have any of the sweet foods she was craving. So I experimented and was able to find Sugar-Free Hershey's Chocolate Chip and made her homemade chocolate chip cookies. She was so happy and It was just awesome to see her not gloomy!
My cooking tragedies
The first Christmas after my parents found out they were Diabetic my mom and I decided to make Lemon Meringue pie from scratch since it was a tradition and she couldn't get it sugar-free at our local Bakery.
I made it the day before Christmas Eve so all I would have to do is take it to my parents house. Everything turned out great, the filling was a perfect color and consistency and the meringue was delightfully fluffy. I was so proud of myself when it was all done. I put it in the fridge to chill during the night until I could show them.
That Morning I get up to get a cup of coffee and when I look in the fridge there was nothing but a flat crisp layer of meringue sitting on top of my meringue. I was so made I though my husband had smashed it! He denied it and then I found out it was because I used Splenda, and since its not real sugar it didn't keep it's chemical shape after I cooled it. I was so bummed I didn't even take it and didn't have time to make another.
