Egg in a Hole
I've been making this for years. Since I rarely have bacon, I use butter instead. I have a big kid (husband) who doesn't like runny yellows so I break his yolk and make sure it is very hard before serving, but for the rest of us, sopping up the left-over yellow with the cut out hole is the best part.

Carolyn's Oh-So-Easy Cherry Cobbler
have been using this for a long time, my mother-in-law calls it surprise pie, wokrs well with any fruit, especially great with peaches and apples. I use a good quality self-rising flour (saves a little money) instead of the baking mix
