Purple Apple Slaw

Fantastic and simple. Didn't have lemon juice so I went with apple cider vinegar, and next time will likely try it with Greek yogurt instead. Sounds odd, but my husband put some in a container and mixed in some canned tuna to take to work for lunch and he said it was great.

Mojito Fruit Salad

Doubled this for a potluck - it was the biggest bowl of any side dish there and was the first thing gone. The mojito dressing was fairly subtle - at least, I think it was, I'm only guessing (I've never had a mojito). I saw that one reviewer "muddled" the mint and sugar together before adding the lime juice - "muddled" is a new word for me - and that seemed like it would make sense as far as the sugar being abrasive and getting more of the mint essence out, so I did that too. The really fun thing about it was that nobody could easily identify what was different about it, just that they liked it. Although one woman did half-seriously suggest that she wouldn't mind testing the leftover juices out with some rum and a little paper umbrella!

Blender Hollandaise Sauce

Thank heavens I found this - my son asked for Hollandaise sauce and the first few recipes I found looked like a royal pain in the butt with the double boiling and all. Maybe I'll try the longer way for a special occasion, but for a mid week after work artichoke request, this was great. I threw in a clove of garlic just cuz I wanted to, and I'm sure it would be good with any number of tweaks.

Pumpkin Cheesecake II

This reactions this cheesecake got at a company Thanksgiving potluck were almost embarrassing. I just read another review and had to chuckle - "Liz" did the same thing I did ... added the maple glaze from another recipe here (the Maple Pumpkin Cheesecake by Eagle Brand, I think). When I was looking at recipes and trying to decide between the two, it just seemed like the way to go, and reactions validated that choice! Very simple recipe, give it a try!

Chicken Marsala

Added a little garlic to the saute and doubled up on the sauce fixin's so there would be plenty of leftover sauce for pasta. As suggested by other reviewers, I also added some cream. I don't know if it was my Marsala but it didn't taste as "wine-y" as I was hoping. Still, an excellent, relatively quick dinner that hubby truly appreciated.

Stuffed Acorn Squash

Loved it. I did modify for a no grain/no sugar diet - used ground almonds instead of saltines and a couple of small seeded and diced tomatoes instead of ketchup ... and just realized I forgot the egg! But still yummy. Since there were no crackers to soak up liquid, I did brown and drain the beef and simmer the whole mixture for a few minutes while I was seeding the squash.

Best Chicken Pasta Salad

I used some leftover chicken, so didn't have the steak sauce marinade flavor, but this was a perfect summer dinner. I added some cauliflower, cut up in pretty small pieces, and some iceberg lettuce as well. My usually picky toddler ate everything!

Creamy Hot Cocoa

Oh yum. But did cut the sugar back to 1/2 c and could probably go down to a 1/3 c ... but that's "Mom" taste. My two sons, aged 13 and 10, thought it was appropriately sweet, while I felt my face scrunching up a little. Toss in a lil cinnamon with the other dry ingredients ...

Honey Glazed Carrots

These were great, although I didn't add msg (I wasn't as scandalized by the suggestion as some other seemed to be and just replaced it with salt). That was the only change I made. I don't quite see how you'd even get anything remotely similar to this flavor by using canned carrots or microwaving them, although I could see boiling them first ... but probably wouldn't because that would just be one more pot to clean and I'm never about making more dirty dishes than necessary!!

Kielbasa Stew

I was hesitant about trying this recipe because I didn't think my kids would go for it, but since we had two big heads from a pick-your-own farm that I didn't want to see go to waste, I went for it - and was very pleasantly surprised. Unlike some others, I did go ahead and use the tomato soup, but no recipe gets left untouched ... I did add some diced potatoes (we also have a lot of THOSE from the pick-your-own farm) and added some more broth to compensate for added veggie volume. Mu husband absolutely raved, kids didn't rave but didn't complain. And boy - is it filling!

Baba Ghanoush

Great and simple. I did use two eggplants because what we had in the store was rather small and I didn't want to end up with a giant bitter one anyway. I followed every other instruction exactly ... except that I got busy doing some other stuff and ended up with the eggplants in the oven for an hour. I couldn't resist trying it as soon as it was done - still warm, even - and it was yummy yummy. Can't wait to take it to work tomorrow with the hummus and falafel I made today too!

A friend made these for Thanksgiving and I've been making it since. TRUE: MY NINE YEAR OLD LOVES THEM!!! Don't pull them out of the oven too soon - make sure they get nice and dark.

White Bread For The Bread Machine

So easy! The measurements are forgiving, and once you make it a couple of times you won't even need to remind yourself. I have never used my bread machine to make fancy stuff but this I can make every few days and justify having it on the counter. My sons prefer this to store bought bread hands down.

Cheddar Biscuits

These are every bit as good as RL's cheddar biscuits. I used "Heart Healthy" baking mix, which has less fat, and skim milk. Full fat cheddar, though, and real butter! I actually cut the last five minutes of baking to about three because of other reviewers warnings that they were a little dry .. and they were still a little dry, but that's probably my fault for using the lowfat mix and skim milk. Very, very good though. We just had them for lunch on a cold day with the Newport Clam Chowder recipe from this site. My husband is a very happy man right now - and full.

Newport Clam Chowder

Very, very good - but not exact. I used mostly chicken stock (one bottle of clam juice), two cans of clams, added one can of corn and two chopped stalks of celery. The biggest change, though, was that I used two cans of evaporated skim milk instead of half & half, which cuts about 90 grams of fat from the recipe. My clam chowder snob husband heartily approved and didn't taste any difference with the skim evap milk. We had clam chowder at a restaurant the other day and I really think this was just as good or better. Try it with the Cheddar Biscuits from this site.

Sinfully Delicious Chocolate Pie

This has to be the easiest pie ever. I'd definitely recommend superfine sugar. I think next time I might put just the smallest hint of a really concentrated instant coffee, but that might just put the recipe over the top as far as richness. As it is, my husband (who would seriously eat an entire pie in one sitting if I'd let him) can barely finish a single piece. A big piece, mind you, but still...
