Chicken Pot Pies with Puff Pastry

Zucchini Grinders

I prepared this as a casserole instead of a sandwich, but I'll definitely try the 'grinder' version! I Added diced onions as quite a few reviewers suggested; also added a few cloves of fresh garlic, fresh basil, oregano and curly parsley from the garden; Left out the cheese; substituted a can of 'diced tomatoes w/ roasted garlic and onions' for the sauce, then baked uncovered in a casserole dish for 15 minutes at 350 F. I sprinkled the top with freshly grated Parmesan cheese and returned to the oven for another 5 minutes, then served it over brown rice.

Roasted Beets and Sauteed Beet Greens

We love fresh beets, so this worked great for us. I prefer roasting them over boiling them, and the skins were so easy to remove afterwards! After I removed the skins and cut up the beets, I added half of a large sweet onion, uncooked and chopped. I also mixed two tablespoons of honey with two tablespoons of red wine vinegar, added a dash each of fresh ground salt and pepper, and mixed it into my beet and onion mixture.

Baked Sweet Potatoes

Sausage Pasta

This reminded me of a dish that my husband always orders at our favorite little local Italian place, so I thought I'd try it. We're both very happy that I did! It was very tasty, very easy to make, and very easy to clean up after! We both loved it, and have added it to our great-things-to-eat-at-home short-list. Slight changes that I made: In Direction #3, I cooked over medium-high heat for 10-15 minutes, which reduced the liquid quite a bit. Also in Direction #3, I added fresh baby spinach AFTER the mixture had reduced to my liking, then just stirred it for a moment until the spinach began to wilt, and then moved right on to Direction #4.

Italian Style Flounder

Simple, healthy, and delicious. I added a dash of white wine and capers to mine, and I cooked it uncovered for 15 minutes. Also traded out the butter for a spritz of olive oil from my Misto.
