Pumpkin Muffins II

I just made this recipe and it turned out really well. I read the reviews and made the following changes: replaced 2 cups of flour with 1 cup whole wheat flour and 1 cup quick oats; reduced the nutmeg and allspice by half and the cloves to 1/4 tsp; replaced the oil with sweetened applesauce; reduced the sugar by 1/2 cup and replaced 1 cup with brown sugar; replaced the pumpkin with canned puree. I increased the recipe by half as I had 3 cups of puree (used 5 eggs), and it made 12 large muffins (I filled the cups to the brim) and 1 small loaf (baked for 50 mins). I'll be making this recipe again, maybe adding some chopped pecans.

Pollo Fajitas

This is a standby recipe for a quick meal. We use chicken breast instead of thighs, and add red or yellow bell pepper and red onion. Great for a quick weekday meal.

Allison's Pasta Salad

I loved the dressing for this salad! I didn't make any changes to the dressing, and I wouldn't to make it again. I did make some changes to the salad itself though. I used whole wheat bow tie pasta and I found that 1 3/4 cups of pasta was not nearly enough for the amount of dressing. I made probably 2 1/2 to 3 cups and still could have used more. Next time, I'll just use a whole package. I also left out the cheese, ham and grapes and used: 1 stalk celery, 1/4 of a red and yellow pepper, 1/4 of a cucumber, 1/2 of a carrot shredded and only a couple of green onions. For a more complete lunch, I added some chicken. It turned out great - I'll definitely make this one again!

Elaine's Sweet and Tangy Loose Beef BBQ

This is a great recipe, everyone loved it. I halved it for a smaller roast and it turned out well. I didn't find that the cook times were accurate though. In order to be able to easily shred the meat, I would have to cook the roast on low for 7 hours or on high for 4-5 hours.

The Best Rolled Sugar Cookies

This is a great salad. It's a nice alternative to the Strawberry Spinach salad which I also really like, and is great in the fall/winter when strawberries are out of season.

Raspberry and Almond Shortbread Thumbprints

This is a yummy cookie! It looks pretty too. The jam is definitely a great alternative to candied cherries. I found the 1 1/2 inch balls made too big a cookie, so we made them about 1 inch. We also found the almond extract a bit overpowering so we didn't put any in the icing and just added more milk.

Apple Pork Chop Skillet

This is a good, easy recipe, but calls for way too much liquid. I would reduce the amount of apple juice to 3/4 c. or 1 c. The stuffing was way too mushy with 1-1/2c. of juice. The pork chops were also a bit bland. Next time I will try sprinkling them with thyme or rosemary before I fry them.

Hot Artichoke and Spinach Dip II

I loved this recipe! I made it twice over the holidays and everyone loved it. I followed the suggestions and used a package of 3-cheese italian blend grated cheese and put less cheese on top and more mixed into the dip. Some cayenne pepper would also be good for a little more zip.

Orange Chicken Stir Fry

I really like the unique orange flavor of this recipe but I followed some of the suggestions and used less soya sauce (2 tbsp)and used a frozen stir fry veggie mix (instead of the sprouts) and served it with rice. I also added a handful of almonds which adds a nice texture.
