Greek Chicken Burgers with Feta

Reviewed: Dec. 11, 2012
Really good! I don't usually have the fresh herbs on hand unless it is summer, but I think I will try dried. And I am more likely to have ground Turkey, so I'll probably try that. Point is, I will definitely be trying this recipe again. I saw that the original submitter recommends roasted red peppers sauce, tzatziki, or something. I agree that a topping/sauce is required, just like any other chicken sandwich or burger. We did a Greek salad and used this on the chicken. Really tasty - served with fries and salad and homemade buns. Thanks for a great option!

Pumpkin Waffles with Apple Cider Syrup

Reviewed: Nov. 28, 2012
I didn't make the syrup - disclaimer! The waffles were great. Did all the stuff that waffles are supposed to do, crispy outside, fluffy inside, light pumpkin flavor. My substitutions: I used pumpkin spice flavoring, 3-4 tsp, in lieu of all the rest of the dry seasonings except salt. Easy peasy. The pumpkin batter isn't too sweet, which makes the waffle a great vehicle for syrup, whip cream and caramel sauce, which is how we ate it. Yums.

Chicken Wild Rice Soup I

Reviewed: Nov. 8, 2012
Really good base recipe to which you can add your preferred type/quantity of seasonings to suit your taste. So yummy, great texture! I ended up doubling the recipe and still found it a little bland, although I didn't have the sherry and used red wine vinegar instead. I guess I like things a bit saltier. But this is really, really good and my kids liked it, too. TIP: If you aren't doing anything extra fancy with the chicken (or using rotisserie or leftovers), I found that it worked perfectly to boil frozen chicken breast with the wild rice for 45-60min in 8 cups of water.

Grandma's Homemade Pizza ala 'Da Boys'

Reviewed: Nov. 8, 2012
A keeper for the crust - makes a LOT if you are going with a thinner crust. I used a jelly roll pan and only used half the dough. I had to make some modifications to toppings because I was out of several ingredients, but I will update when I remake with the original recipe. Note: Froze half the dough. Looking forward to thawing and using the pre-made dough the next time. I will thaw the dough in the fridge overnight and then put on counter to continue to bring to room temp and rise further for a couple of hours before cooking. Hope it works out with this dough - definitely a good recipe.

Zesty Slow Cooker Chicken Barbecue

Reviewed: Sep. 18, 2012
This was great! I did (out of need) make some minor tweaks because I only had 8oz BBQ sauce, so I augmented with Heinz57 and Catalina dressing. I used a homemade creamy style Italian dressing. It was SO good. Going to become my go-to for shredded BBQ chicken.

Tasty Buns

Reviewed: Sep. 18, 2012
I loved the speed and ease of this recipe. The buns were pretty good, but on their own merit and without the quickness, I probably would do a 3 star. They were a bit sweet - I'd probably cut the sugar a bit next time. But I will definitely be making these again. Easy when it is pretty speedy. I let them rise in the pan for about 45 min and that was enough. Thanks!

Waffles II

Reviewed: Aug. 20, 2012
What sold me on trying this recipe was the review that said that this was an awesome base recipe to which you can add a variety of different flavor combinations to suit your own tastes and it doesn't make the "base" fall flat. This was so true! While I usually try to make a recipe unmodified prior to altering, I do like a bit of flavor to the waffle, so I added a 1/2 of natural applesauce and a 1/2 tsp of pumpkin pie spice, I reduced the oil to 3 T and added a T of brown sugar. They rose well while in the waffle maker, were crispy on the outside and dense and yummy on the inside, and just were overall really tasty. Can't wait to try other varieties. Yum! Thanks!

Shish Tawook Grilled Chicken

Reviewed: Apr. 14, 2012
Really good flavored marinade. We marinated overnight, and it was quite a strong flavoring on the chicken. If you wanted a more subtle flavor, perhaps closer to the four hour minimum recommended by the recipe would be good. I didn't make any changes, except no parsley and I used what I wanted to for kabob veggies (rainbow peppers, purple onion and yellow onion). Really got great reviews from all the party-goers. This also qualifies as gluten free for my MIL who has celiac. Nice!

Chicken Pot Pie IX

Reviewed: Dec. 12, 2011
Yummy! I have another go-to recipe that calls for "cream of" soup as a base, and I loved the non-canned version. I used the frozen mixed veggies (steamed - not boiled with the meat), and added a little poultry seasoning in the sauce as it was too subtle a flavor for me prior to baking. Otherwise, perfection! We will definitely use again.

Ruth's Grandma's Pie Crust

Reviewed: Dec. 12, 2011
Really good flavorful crust - good with Chicken Pot Pie. I am interested to see how it is with sweet rather than savory. Yum! It was a bit difficult to roll (kept coming a part, didn't blend well) but this might be because I used the electric mixer rather than kneading.

Beef Taco Skillet

Reviewed: Jul. 14, 2011
Solid recipe. As is, I give it three stars. Even with tweaks it is three stars, but it was delicious and quick and my kids really liked it because it is pretty mild. I'd make it again. I did use the chips and corn tortillas, because I found out I didn't have flour tortillas. Oops.

Black Bean and Corn Salad II

Reviewed: Jul. 8, 2011
Really good. I followed the dressing recipe exactly, except for the seasonings. I added more cayenne (1/4 instead of 1/8th and added a tsp of Tabasco as well. You can really throw "whatever you have" along the same theme as the original recipe - we followed pretty closely, but minus the corn and I used dried beans instead of canned. Really good! Thanks!

Irish Bacon And Cabbage Soup

Reviewed: Mar. 15, 2009
Really great recipe! Like others, I used regular bacon and green cabbage. I also added some onion and garlic (1/4 cup onion and a tsp of minced garlic), sugar (2 T) and ended up with a third potato and an additional 12 oz of chicken broth. Husband, sister and 3 yr old all liked it, although the 3 yr old didn't like the cabbage.

Pepperoni Casserole

Reviewed: Aug. 18, 2008
This is a good casserole in a flash recipe. We didn't have italian sausage, so I used diced pepperoni and some frozen meatballs to mix in with the pasta and sauce. Probably could go without and still have this taste good. I added some italian seasonings for some zip. Definitely a good recipe for a potluck (I brought it to church and it was gone in a flash while other dishes around it stood partially eaten).

Flavorful Beef Stir-Fry

Reviewed: Feb. 3, 2008
Really great recipe. I made some substitutions with what we had on hand (celery, pea pods, onion & sweet red pepper) as well as adding minced garlic, ground ginger, marinating the meat for an hour and making extra sauce. It would have been good as is as well - one point is that this isn't at all spicy, even with the garlic, so if you want a "kick" you should add some additional heat yourself. We added crushed red pepper flakes to the end product. Thanks for the recipe! It is a keeper.

Awesome and Easy Creamy Corn Casserole

Reviewed: Jan. 26, 2008
LOVE it. My DH said he could eat the entire pan. Very sweet, so a good compliment to a spicy side dish. I want to bring to our church potlucks, but need to take someone's suggestion and make it more visually appealing, because I think it might get passed up based on looks alone. Delicious!

Tofu Tacos I

Reviewed: Feb. 19, 2003
Really great spice blend! We added a bit more of the spices as we had both experienced bland tofu recipes (definitely to be avoided) and didn't use all of the suggested toppings - just what was fresh at our grocery store. In order to make a more chewy filling, we added some spanish rice to each taco. Really quick and very tasty. Definitely a keeper.
