I loved this recipe. It's great as is. I served it for my cousin's family and they loved it! However, the second time I made it, I switched it up a little by adding about a cup & a half of ham (instead of 3/4 cup), melting a cup of sharp cheddar cheese in the roux, and leaving out the salt. I also made life easier by using canned or boxed chicken broth and skipped peeling the potatoes. (There's more nutrition that way :) I had never made homemade soup before, and it turned out PERFECT!
