This is my most used recipe on this site. It is amazing! Every time I make it for someone they say it's the best chili they've ever had, and most of them are not vegetarians.
A few notes:
- Follow the directions and use whole tomatoes you crush yourself. Using crushed tomatoes doesn't allow for enough liquid.
- If you like your chili spicy, use 3 jalapenos and McCormick Hot Mexican Style Chili Powder. It's worth it to go find it if it's not in your usual grocery store.
- Serve with fresh grated cheddar cheese and sour cream. Obviously this strays from the healthy vegetarian goal, but boy is it delicious!
