Golden Green Bean Casserole

Ohhhh, this was so good as comfort food. It was rich, creamy, and had a nice, crunchy top. Another plus was that it was really simple and quick. I would definitely make this again. Good with and without peppers.

Cheesy Creamed Spinach

This was delicious! The dish cooked well, and came out fabulous looking. So far I've made it three times as a side dish. The only change I made was to decrease the amount of heavy cream (as I found the amount listed doesn't thicken well, and drowns the dish). Other than that, it's perfect!

Easy Portuguese Cookies

Dough was a little difficult to work with, but cookies came out looking fabulous. This reminded me a little of Amish sugar cookies in texture (you can find them on allrecipes as well). Too much cornstarch though (gave it a sour aftertaste). These looked nice, but I would never make them again due to the flavor.

Chocolate Chip Muffins

Batter blended well. Muffins turned out PERFECT. Tops were raised, rounded, and deliciously crunchy, while the stems were soft and fluffy. Color was a nice golden brown. These were gone in 2 days. I definitely would make these again.

Chocolate Chip Muffins

Changes made: 1 cup milk and a little more oil (add until it's a wet, but thick consistency). The muffins came out big and fluffy. The tops were nice and crunchy, and the insides were moist. I definitely will make these again. Chocolate chip muffins are my weakness. These were really good!

The Best Rolled Sugar Cookies

I am a huge cookie snob, espc. when it comes to sugar cookies (my fav cookie of all time!). The dough mixed well for these and cut out nicely. I had to keep a close eye on these cookies, though, as they burn VERY easily. Once baked they looked beautiful and had a nice texture. The flavor, however, is the main reason I deducted two stars. These were bland, and just not a sugar cookie I enjoyed :( This wasn't my fav cut-out sugar cookie recipe. I wouldn't use it again.

Fluffy Seven-Minute Frosting

This whipped up fantastically! It's a nice, soft frosting with a sweet flavor (kind of like marshmallow fluff). The only change I made was to half the vanilla (so only 1/2 tsp. instead of 1 tsp). I also added pink food coloring for valentine's day. Cupcakes looked so cute! Great recipe!

Fluffy Pancakes

The batter mixed well (nice and thick) and poured out nicely into the pan. The finished pancakes were golden brown, fluffy, and sweet. The only change I made was to add 1/4 tsp vanilla. Great recipe! Would definitely make again!

Potato Casserole I

Pretty good. I made this a long time ago for a Big Love party (we served frog-eye salad, jello, fry sauce, etc...) There were a few changes I made. (1) Forget cream of mushroom. Just stick w/ cream of chicken (2) Switch out bacon bits and potato chips for crushed cornflakes (put cornflakes in a bag w/ a little melted butter, crush them, and then sprinkle over casserole about 10 minutes before it's done in the oven).

A Number One Egg Bread

This recipe actually teeters between 3 stars and four stars. The dough was easy to mix and kneaded well. It took a longer time to complete its first rise. Cooking time also needed to be decreased as well, so keep a sharp eye on your bread. Finished product was pretty, the texture was good, and the flavor was a light sweetness (suprisingly not overly eggy). I personally did not care for the flavor, but my husband and kids liked it. So for me it was only a 3 star, but my hubby and kids gave it 4 stars. This makes a lot of bread (you could actually get two decent sized loaves). I cut the recipe in half.

Chicken Pot Pie IX

Chicken pot pie is my favorite comfort food to make. This recipe was pretty good. It was thick and creamy, and looked delicious. I made this twice (the first time following it exactly and finding it kind of bland). The second time I made it I changed the following: removed the celery, added peeled & cube potatoes, and I sauted the onions in garlic. Much, much better. Even my little picky-eater kids gobbled it up. Good recipe :)

Ooey-Gooey Cinnamon Buns

Cinnamon buns turned out large, fluffy, and deliciously gooey. The dough mixed well, and baked beautifully in the oven. If you like big, sweet, soft cinnamon buns then this is the recipe for you. Sadly, I could not add the pecans to mine, as my daughter refuses to eat them :( Pecans probably would've made these even more fantastic! Definitely worth keeping.

Eclairs II

I used this to make la religieuse instead of éclairs, and the dough (pâte à choux) was fantastic! It puffed up nicely, was a beautiful light golden brown, and it was hollow inside (perfect for swiss buttercream). I did have to alter the cooking time -- 450 F for 9 minutes, and then 325 F for 25 minutes. I did not try the custard filling, BUT the dough was to die for! I highly recommend the dough for la religieuse, éclairs, croquembouches, and cream puffs.

Molasses Sugar Cookies

The dough mixed well and the cookies had a nice, crisp texture. They also had a rich molasses flavor. I'm very happy with this recipe. I followed it exactly, and I would make this again.

Iced Pumpkin Cookies

I'm a real cookie snob and (second to sugar cookies) pumpkin is my fav flavor. These were good. Better than "okay," but nothing that makes them great. They were soft, cake-like cookies with a very light pumpkin flavor. So texture-wise and appearance-wise they were nice. Flavor, however, was lacking. Next time I think I will try altering the spices and see what happens.

Empire Cookies

A good shortbread cookie. Not too dry at all. Dough was easy to work with (rolled out nice, didn't crumble, cut out well). Finished cookie looked and tasted wonderful. Instead of candied cherries on top I used rasberries dusted with sugar. Awesome recipe!

Fry Sauce

I made this for a Big Love marathon party (we served funeral potatoes, frog-eye salad, carrot salad, jello...) It got mixed reviews from other guests, but I really liked it. You can vary the ratio to your liking (more or less mayo as you please). And some people mixed a bit of chopped pickle relish in it too. I thought it was good for french fries and burgers. I'm from NY, so this was a bizarre looking combination for me. I'm glad I tried it!

Frog Eyed Salad

I get requests for this all of the time it's so good! I intially made it for a Big Love marathon party (we had funeral potatoes, frog-eye salad, carrot salad, and jello). It reminds me of tapioca pudding (due to the little round acini de pepe pasta) and ambrosia salad. I highly recommend this, espc. for potlucks and any parties. Easy to make and forgiving with substitutes. You can use fruit cocktail instead of pineapple and mandarin oranges. I use homemade vanilla whip cream instead of the frozen kind. Fantastic recipe! Very happy!

Steamed Egg (Chawan Mushi)

I wasn't wowed by this. For the amount of work that went into cooking it, I expected a better dish. Flavor was bland and uninteresting. Texture was nice and smooth, though, and aesthetically, it was a nice dish to serve to dinner party guests. I woudn't make this specific recipe again. It wasn't bad. It just wasn't very flavorful.

South African Yellow Rice

A good side dish to bobotie. It is pretty sweet, so depending on who you're cooking for I would adjust the sugar. I've made it both ways (sugar as written & sugar decreased) and it's delicious. It's not an amazing-wow dish, but it's a nice compliment to bobtie. I also made a cumin-date sauce to go with it. So all and all, a pretty good geelrys recipe.
