Vegetarian Chickpea Sandwich Filling

Absolutely fantastic! Made it without the celery because we don't like it and ate it right after making it and later after it chilled in the fridge. It's good either way, but is definitely MUCH better chilled. I will make this again and again!

Sauteed Portobellos and Spinach

This was really good but I like a lot of garlic so I added three cloves. Otherwise, it was perfect. Served it over bow-tie pasta for a delicious meal. My 16 years old said it was like something she would eat at Olive Garden.

Mexican Beans

I followed this recipe exactly and it came out bland. However, they look just like the charro beans at my favorite mexican restaurant and with a few seasonings next time, they will have a much better flavor I'm sure.

Spicy Potato Soup II

This was ok, not even 4 star worthy. I even seasoned the ground beef while it was browning and used manwhich sauce instead of tomato sauce for more flavor. However, it was just ok to help me get rid of some things i needed to cook.

Homemade Biscuit Mix

I haven't made biscuits from scratch in almost 10 years because the first time I made them they turned out wrong. I was always hesitant to try again. I braved it today and they turned out great! There are a few things I'll do differently next time like not roll them out as thin and bake them a little less than the 10 minutes. Otherwise, I wouldn't change a thing!

Chicken and Biscuit Casserole

this was really good! for the person who had problems with the sticky dough, just add a smidge of flour and mix it in. mine was less sticky and i was able to roll it into balls, then flatten. Everything turned out great!

Go-To Crawfish Etouffee

This is my second time eating crawfish and was very apprehensive. The first time they tasted too 'fishy' for me so I took a friends advice and rinsed them before putting them in the skillet. Very glad that I did! Other than the fact that it could be more spicy, it was a really good dish and something I will make again.

Campbell's® Creamy Dijon Chicken with Rice

This was ok. It can definitely be improved upon. It did not come out creamy at all, it was actually runny. Next time I will do the following: Season the chicken breasts, use less water, and more dijon. We'll see how that goes. Otherwise, I loved how quick and easy it was.

Sweet Pepper Rice

Very good base recipe for me! Instead of using water, I used homemade chicken stock. I accidentally put 1 cup butter instead of the 2 tbsp (for four servings). I have no idea why i thought it called for that much butter, but like Paula Deen says ' Everything's better with butter'. While the rice was simmering, I sauteed portabella mushroom slices in a little olive oil, then added to the rice mixture when it was done. WOW! It was amazing! I also only had 3/4 cup white rice, so i made a full cup by adding brown rice.

It was good but not exceptional. Too much mustard and not enough lemon for me. Next time I make it I'll use less mustard, more lemon and garlic, and a splash of white wine.

Shrimp Lemon Pepper Linguini

I'm not the best of cooks, and yet I didn't even mess this one up! Absolutely wonderful! Only problem that I had was that it didn't reduce like it said it would, so next time I'm using less broth and wine. Otherwise it's wonderfule! I spooned some of the extra liquid over steamed broccoli and MMMMMM!!!!! Enjoyed some of the wine with the meal too! Definitely a keeper!

Cajun Chicken Pasta

This was an awesome recipe and one of the best dishes I've ever made. It's definitley a keeper! However, I had to convert it to feed 4 people and it called for 3 cups of heavy cream. Thatwas way too much! it made the sauce runny, but we were able to sop it up with the garlic bread! Other than that it was fantastic! I will make it again except I plan to add garlic and sun dried tomatoes and use a little less cream.
