Favorite Banana Blueberry Quick Bread
Omitted nuts, and added more oatmeal and blueberries as suggested. Used a little lemon juice, and less sugar, to help with the extra ripeness of the bananas. With a touch more salt, to balance the oatmeal, this recipe is easy and yummy.

Tomato Chicken Parmesan
I ended up following the recipe, but added an old technique of seasoned flour before the egg step. This made everything coat very nicely. Since I pounded the chicken, it didn't take long to cook the chicken to a golden brown. Since I used my grandma's old cast iron skillet I was able to brown the chicken then add the sauce and cheese (mozzarella) and stick it right in the oven. My husband loved it! Thank you.

Easy Stroganoff
Had extra meat so I scaled JUST the seasonings and Worcestershire sauce to the right amount of meat. I omitted the extra mushrooms and added diced onions. With a little more seasonings and a shell pasta, it was a sure hit for the kids. My husband thought it was just "o.k.". As a mom, it beats the aftertaste of H. Helper (and the sodium) and was easy to make, but probably will not make it again.
