I made this before Hurricane Irene knowing we'd want food that could be eaten cold in coming days. I just used the ingredients we had, so onion and green peppers (no celery, no carrot or pimento peppers). It seems very versatile and would work well with lots of different variations.
I made the dressing almost exactly - I substituted apple cider vinegar for white because that's what I had.
I was a little worried it was a bit sweet and mustardy but in the end it came out really well. Everyone loved it! So, it was quick and easy and was enjoyed by all.
I will definitely be making again and playing with different vegetables to include and maybe a bit less sugar. A fantastic recipe to have as a basic for barbqs etc.
