Cranberry Orange Cookies

WOW! What a wonderful cookie. I just made these last night for a cookie tray and they were the best of all five varities I tried. I did make a few changes to the recipe: *I added 1 1/2 tsp of zest like some of the other reviews suggested. *I used fresh cranberries and sliced them in half (not chopped). I thought they were the perfect size when the cookies baked. *Some of the other reviews suggested adding vanilla extract, but I think that almond extract and cranberries are made for eachother, so... I added about 1/4-1/2 tsp. almond extract. *Instead of walnuts, I added almond gems to accompany the extract. The gems are small enough so they don't stand out too much -- perfect for nut lovers and perfect for the rest of us! *I decided to try the cookies w/o the frosting first because of some reviews stating that the cookies were too sweet. I thought the cookies were perfect w/o the frosting, so why hassel?!! *Also, if I left them in the oven one second longer than 12 minutes, they were overcooked.

Simple But Awesome Lemon Pepper Pork Chops

Easy and simple recipe! Make sure to put the wrapped chops in a baking dish to catch the leaking oil. I halved the oil and butter--next time I will 1/4 the amount. You just don't need nearly as much as the recipe calls for. Flavor was good...I used soy instead of worchestershire like some of the other reviews suggested. I also baked at 350, but I found they needed 45 min at this temp not 35 min. I think the lower temp helps keep the chops tender. I will use this recipe again next time I'm in a rush and need something simple.

Eggnog Cookies I

I made these last night for a cookie tray. They smelled wonderful as they were baking. I doubled the nutmeg to give them a little more flavor. As is, I would give the recipe 3 stars, but I added a eggnog frosting to help them taste like eggnog (not just a sugar cookie) which bumped them up to 4 stars. Eggnog Frosting: 1/2 cup butter (beat until fluffly), beat with 3 c. powdered sugar, add 1/2 tsp. brandy extract and 4 TBSP. eggnog, beat an additional 2 min. *I added a few drops of yellow food coloring to the frosting to give it the look of eggnog. Overall, the cookie was good, but don't expect amazing.

Oranged Cranberry Sauce

Wonderful recipe!!! I made this for Thanksgiving and received many many compliments. I'm not a fan of cranberry sauce...but I loved this. It is also easy to make! If your looking for a good cranberry sauce you have to try this. I mixed the leftover with mayo and used it on turkey sandwiches! Yummy!

Garlic, Spinach, and Chickpea Soup

Chicken and Pasta Casserole with Mixed Vegetables

My husband really enjoyed this dish...I thought it was okay. I had to make a few substitutions based on the ingredients I had at the time: I used bowtie pasta, I used only cream of chicken soup, and I added some milk like some of the other reviews suggested. It had alot of flavor and was not dry at all. I'm just not sure that I would ever make it again.

Tofu Lasagna

I loved this recipe! My husband also loved it (and he's not a fan of tofu.) I did double the sauce like some of the other reviews suggested. I highly recommend this recipe.

Avocado Stuffed Yams

WOW! This recipe is amazing. I love yams, but I was lookig for a way to eat them w/o adding a ton of sugar, marshmellows, etc. like all the other recipes I've found. It was such a supprise how good these yams turned out. Just try it!!!

Thin Mint Crackers

WOW! I was very cautious about getting my hope up for "GIRL SCOUT-LIKE" Thin Mints, but it's true -- these are just as good! And, they're made out of crackers. Based on other reviews, I made a few changes: I used a pound of milk chocolate almond bark. Heated it in the micro and was ready to go in about 1 min. Very easy. I tossed the cracker in the chocolate, flipped with a fork, and then lifted out with a fork, and slid it onto a cookie sheet lined with wax paper. The chocolate is thick enough so the fork doesn't leave any marks. Once the cookie sheet was full, I put it in the freezer to set. Only took a few minutes until they were ready to be stored. The bottoms came out perfect. Also, there was only enough chocolate for 64 crackers.

Bacon Quiche Tarts

I love these with a few modifications I got from other reviews. I added mushroom, used 1/2 a Grands biscuit, cooked @ 350 NOT 375. I put the bacon in the bottom, then topped with the filling. I love this recipe because you can customize the fillings to your own taste. Reheats well.

Cranberry-Pumpkin Cookies

Decent cake-like cookies, but they need a little more flavor. The pumpkin was not strong enough (my husband didn't even know they were pumpkin until I told him)! They also need more sugar. I think it would be wise to put some sort of frosting on the top like I noticed on the photo. Maybe I'll try it again with a few modifications.

Ribbon Pumpkin Bread

Yummy! This light version tastes better than any other pumpkin bread I've ever had! I did up the spices a bit--I used about a tsp. of each of the spices called for, and then I added some nutmeg. The cream cheese filling didn't turn out too well. I didn't have enough leftover batter to cover the filling once I had already poured it into the pans. So...be careful to leave yourself enough batter to top with. Next time I think I'll just make the bread and leave the cream cheese filling out. I didn't think it was that great and it would cut back on calories! Also, it BARELY makes enough for 2 loaves.

Glazed Tofu Meatloaf
