Chef John's Cauliflower Pizza Crust

We’ve made this about 5 times now. Messed it up the first time cooking too long, we shortened it about 10 minutes. It does take a LONG time, but it is a family afternoon project. We are all trying to loose weight, so this is our cheat for the weekend. All the water HAS to be squeezed out, the reviewer that said theirs was soggy didn’t squeeze out all the water. You need strong hands to do this, so my son and husband do this portion. Also, We don’t use goat cheese, but all parmesan. Make sure you check it after 30 minutes because in our oven it is done. Love the garlic - olive oil mixture brushed on prior to putting on toppings. Does this taste like real pizza, No, but it sure satisfies those cravings and you don’t get that heavy gluten gut after you eat a normal pizza.

Chef John's Pumpkin Pie

I made three pumpkin pies, all from all recipes.com - The other two were hits, this one was not The sweetened condensed milk version of this pie just ruined it. Too thick, dry and sweet.

Bacon Wrapped Barbeque Shrimp

these cooked up fine (I did precook bacon slightly), but just wasn’t enough flavor. I made them again and basted with bbq sauce which improved it.

Simply the Easiest Beef Brisket

The sauce was delicious considering only 3 ingredients. Tasted like a honey bb-q. I did this recipe exactly as shown, but my meat wasn't fork tender. It was good, but would have been very dry without the sauce on top. Not sure why my meat didn't come out as tender as other reviewers.
