Chef John's Cauliflower Pizza Crust
We’ve made this about 5 times now. Messed it up the first time cooking too long, we shortened it about 10 minutes. It does take a LONG time, but it is a family afternoon project. We are all trying to loose weight, so this is our cheat for the weekend. All the water HAS to be squeezed out, the reviewer that said theirs was soggy didn’t squeeze out all the water. You need strong hands to do this, so my son and husband do this portion.
Also, We don’t use goat cheese, but all parmesan. Make sure you check it after 30 minutes because in our oven it is done.
Love the garlic - olive oil mixture brushed on prior to putting on toppings. Does this taste like real pizza, No, but it sure satisfies those cravings and you don’t get that heavy gluten gut after you eat a normal pizza.
