Baked Oatmeal I

Reviewed: Oct. 15, 2011
Very simple to throw together!! Gathering from the reviews my siblings gave me it was very yummy as well. This was the first time they had ever tried baked oatmeal and they definitely enjoyed it. I doubled the recipe and made it in a 9x13 pan. I also omitted the raisins, subbed applesauce for the oil, and used half of the brown sugar called for. The only complaint I received was that it was a little too sweet. Next time I will reduce both the white and brown sugar. Thanks for sharing:) *update* As good as this recipe is, Baked Oatmeal II from this site is even better.

Paleo Friendly Banana Shake

Reviewed: Sep. 14, 2012
This is one of my favorite breakfasts:) I am not Paleo, but I still love it. Super simple and healthy!! I usually use around 1/2 cup of milk for every frozen banana, and then allow to freeze for about 20-25 minutes before drinking. The consistency turns out perfect for me. Some of my favorite additions are cocoa powder, cinnamon, mint, peanut butter, and instant coffee. All delicious!! Occasionally, I use almond milk in place of the coconut. Great either way!! Thanks for sharing:)

Spanish-Style Quinoa

Reviewed: Jan. 27, 2012
Spanish rice is one of my favorites and this was a great substitute now that I can't eat rice. Quinoa is fairly new to me and I thoroughly enjoyed this recipe. The changes I made was to add extra onion, garlic, and spice. Oh, I also added some cilantro and used a couple thai chiles in place of bell pepper. I was amazed at how good the flavor turned out to be. Thanks so much for sharing!!

Best Tuna Casserole

Reviewed: Aug. 24, 2011
I found this recipe and my mom made it tonight for our family. She said it was the best tuna casserole she has ever had.One of my sisters who has never liked tuna casserole even said it was good. Everyone loved it. I didn't try it because it isn't very healthy but I wish I could have from all the compliments it got from our family. This will definitely be replacing our old tuna casserole recipe. Thanks for sharing:)

Apple Brickle Dip

Reviewed: Jul. 26, 2011
My dad actually brought this recipe home with him after an out-of-town trip. He had tried it at a church he attended and enjoyed it so much that he obtained the recipe. Now it is our absolute favorite apple dip. We often make it for church functions, family parties, and holidays. It is a big hit every time!!

This was very simple to make, and came out extremely moist!! I baked it in a 9x13 pan, but otherwise followed everything else exactly. I didn't actually try it myself, but it got great reviews from my family. They all loved it. Thanks for sharing!!

Heavenly Blueberry Smoothie

Reviewed: Sep. 12, 2011
Yummy!! My dad and I had this for breakfast this morning and it was very filling. The changes I made were to use unsweetened soy milk, plain yogurt, and mixed berries. Oh, and I also threw in some spinach. The only thing I would do different next time is to add a little bit extra honey because I couldn't tell it was there. This one will definitely become part of our breakfast routine:) Thanks for sharing!!

Yummy No-Bake Cinnamon Rolls for Kids

Reviewed: Aug. 25, 2011
These were great! They were a neat twist on the regular bread-butter-n -sugar we sometimes have. All my brothers and sisters loved them, but my mom probably liked them better than anyone:) We used whole wheat bread because that was all we had. Ours didn't turn out very pretty, but they were fun to make. Thanks for this great idea!!

Baked Kale Chips

Reviewed: Aug. 7, 2012
These are a great, healthy substitute for potato chips!! The only problem I had with this recipe is that it calls for way too much salt. The first batch I made came out extremely salty. On the next batch, I used only a pinch of salt. They turned out perfect for my tastes. Thanks for sharing!!

Simple Baked Apples

Reviewed: Sep. 28, 2011
Delicious!! I used organic sugar, omitted the flour(don't eat grains), left out the walnuts(had none), and used 2% milk. Everyone enjoyed it. The only problem I had with it was that it was too sweet for my tastes. No one else in my family thought so though. Next time I will either cut the sugar in half or just leave it out altogether and maybe use some honey instead. I will definitely make this again!! Loved it especially because after I omitted the flour it became the perfect grain-free treat. Thanks for sharing!!

Oatmeal Chip Cookies

Reviewed: Sep. 22, 2011
These are good and very simple to make. Not the best cookie recipe in the world, but still a really yummy one. Things I changed were to use 1-1/2 cups brown sugar, 1/2 cup white, double vanilla, quick cooking oats vs. old-fashioned(next time will use old-fashioned), added a couple shakes of cinnamon, and a teaspoon of cream of tartar to give it that crinkly look. I made them and the best, big, fat, chewy cookies(or whatever they are called) and this recipe at the same time and this one received more votes:) But I have to say I'm still on the lookout for that perfect chocolate chip cookie recipe that is absolutely to die for. So if anyone finds it LET ME KNOW:)) Thanks for sharing this one thoug. My family enjoyed it!!

Amy's Healthy Fruity

Reviewed: Sep. 22, 2011
Yum!! This was very refreshing. I didn't add the soy powder, threw in some flaxseed, and used assorted frozen berries. Otherwise followed everything perfectly. The only change I would make next time is to add some honey because it was a tiny bit sour. Thanks for a great recipe!!

Hurricane Cake

Reviewed: Aug. 28, 2011
This recipe was so simple and easy. I made two pans last night. We ate one pan warm and then let the other refrigerate overnight. I served it to company this afternoon and they told me it was a 5 star recipe:) Like some of the other reviewers, I also had problems with it getting stuck to the bottom of the pan. This only happened to the pan that was refrigerated. The one we ate warm I had no problem with at all. My family all said that it is more rich when you eat it fresh out of the oven, almost too rich. Nonetheless, this recipe has become a new family favorite. Thanks for sharing!! BTW, its AWESOME with a glass of milk:)

Colombian Lentils

Reviewed: Feb. 29, 2012
Yum!! Made no changes except for the addition of garlic, and it turned out great. I served it over quinoa for a healthy and comforting meal. For those who felt this recipe was bland or needed something, a squeeze of lemon juice is a nice touch. Thanks so much for sharing. I will be making this again soon!!

Mom's Country Gravy

Reviewed: Oct. 15, 2011
I followed the recipe exactly, except to substitute butter for the oil. After cooking it forever the gravy wouldn't thicken(which was very frustrating) so I ended up adding some cornstarch. My gravy turned out really dark. A a few of my siblings actually asked me if it was hot chocolate while I was making it:) Must have done something wrong somewhere... Anyhow, they liked it and ended up finishing it all. I probably wouldn't use this recipe again because of the bad experience I had making it, and we all still like sausage gravy alot better. Thanks for sharing though.

Oven Fried Chicken II

Reviewed: Oct. 15, 2011
Much simpler than fried chicken and almost as delicious!! These were fun to make and everyone enjoyed eating them. My mom said that this chicken should become one of our new "company dishes." We followed the recipe as written except to use cajun seasoning in place of paprika. This one will for sure be made again!! Thanks for sharing!!

Spinach and Feta Turkey Burgers

Reviewed: Oct. 15, 2011
Mmmm....Delicious!! I started making them and halfway through I discovered that I didn't have any cheese. Even without the cheese they were great!! I used fresh spinach, doubled the garlic, and added some chicago steak seasoning. Next time I will be sure I have some feta cheese!! I am sure they would taste even better. Thanks for sharing:) P.S.( Would be a five-star, but I wanted to wait and try it with the feta added.)

Black-Eyed Pea Salad

Reviewed: Sep. 27, 2011
Wow!! So yummy!! I couldn't stop eating it!! I used a 16oz bag of dry beans and didn't measure anything else, just put it in. I also added some carrots. Mmmmm........ Next time I will probably add some extra balsamic vinegar. It gets better the longer you keep it in the fridge so make sure not to skip out on that step. Thank you for sharing, I will be making this ALOT!!

Banana Berry Smoothie II

Reviewed: Sep. 12, 2011
This was a yummy and refreshing breakfast treat. I used soymilk vs. milk, plain yogurt vs. vanilla, and I added some flaxseed and spinach. My dad and I both thought it was very good. The only thing I would probably change next time(there will be a next time) is to add more strawberries. Thanks for this great recipe!!
