Beef Nacho Casserole

Reviewed: Aug. 30, 2011
Didn't actually try this dish myself, but my family gave me 5 star responses:) EVERYONE had seconds, MOST had thirds, and SOME had fourths. They all loved it and couldn't stop telling me thank you for making it. This was so simple to prepare. I used a big cookie sheet that had slightly raised sides and just spread the meat layer, crumbled the chips over it, and topped with all the cheese. This made it a little bit faster than layering it. I used 2-1/2lbs ground beef, a cup of salsa and a can of diced tomatoes w/chilies, 2-1/2 cups frozen corn, 1-1/2 cups ranch dressing, some taco seasoning, 4 cups of crushed tortilla chips, and 2 cups of cheese(ran out). The only thing I would probably do different next time is to add some onions, mix extra cheese into the meat mixture, and use sour cream. This one will definitely become a regular at our house. Thanks for sharing!! Oh, and be careful not to leave in the oven to long because the cheese gets really hard which makes it difficult to cut.

Homemade Black Bean Veggie Burgers

Reviewed: Aug. 30, 2011
WOW!! This was the very first veggie burger I have ever eaten in my entire life, and I absolutely loved it!!! Wish I would have discovered this one a long time ago:) These are the few changes I made: 1 used banana pepper in place of bell. 2 used red onion. 3 omitted garlic(had none) and added garlic powder instead. 4 used 1tbs flaxseed and 3tbs water in place of egg. 5 used cayenne, not chili powder. 6 spread chili sauce on bread instead of adding to burger(why I did that? IDK =) 7 in place of bread crumbs I used garlic&cheese croutons and just threw them into the processor for a couple of seconds. I ate it on a whole wheat sandwich thin spread with thai sauce, and sliced some tomato, onions, and cabbage. DELICIOUS!! I halved the recipe and it made two large patties. Thanks so much for this awesome recipe!!

Hurricane Cake

Reviewed: Aug. 28, 2011
This recipe was so simple and easy. I made two pans last night. We ate one pan warm and then let the other refrigerate overnight. I served it to company this afternoon and they told me it was a 5 star recipe:) Like some of the other reviewers, I also had problems with it getting stuck to the bottom of the pan. This only happened to the pan that was refrigerated. The one we ate warm I had no problem with at all. My family all said that it is more rich when you eat it fresh out of the oven, almost too rich. Nonetheless, this recipe has become a new family favorite. Thanks for sharing!! BTW, its AWESOME with a glass of milk:)

Bean Quesadillas

Reviewed: Aug. 27, 2011
This was good, but needed a little more flavor. I added lots of lemon and cumin, but next time I will also add jalapeno, and cilantro. I used corn tortillas instead of flour and added some chicken. It also works good just eating it like a taco with melted cheese on top. Thanks for sharing!!

Yummy No-Bake Cinnamon Rolls for Kids

Reviewed: Aug. 25, 2011
These were great! They were a neat twist on the regular bread-butter-n -sugar we sometimes have. All my brothers and sisters loved them, but my mom probably liked them better than anyone:) We used whole wheat bread because that was all we had. Ours didn't turn out very pretty, but they were fun to make. Thanks for this great idea!!

Best Tuna Casserole

Reviewed: Aug. 24, 2011
I found this recipe and my mom made it tonight for our family. She said it was the best tuna casserole she has ever had.One of my sisters who has never liked tuna casserole even said it was good. Everyone loved it. I didn't try it because it isn't very healthy but I wish I could have from all the compliments it got from our family. This will definitely be replacing our old tuna casserole recipe. Thanks for sharing:)

Peanut Butter Muffins

Reviewed: Aug. 24, 2011
These were great and very, very easy to make. I made them for my brothers and sisters and they all loved them. With one batch I was able to make 12 regular muffins and 12 mini muffins. My 6 year old brother said he could eat 5 big pans of them and 5 small pans:) The only thing I changed about the recipe was to substitute flaxseed for the eggs. After they were finished baking we poked holes lengthwise through the middle and put grape jelly in them. The only thing I would probably do different next time is to add more peanut butter. Thanks for the recipe; I will for sure be making these again!!

Orange Vinaigrette

Reviewed: Aug. 23, 2011
This was okay. I didn't care too much for the orange juice taste on salad or the fact that it wouldn't stick. If I decide to make this again I will probably use it as a marinade. Thanks for the recipe!!

Groovy Green Smoothie

Reviewed: Aug. 23, 2011
This was good, just not great. I love spinach, but I didn't care for the taste of it too much in this drink. I followed the recipe exactly except to throw in some flaxseed. It is not very filling as I like my smoothies to be. I might make it again, but probably just as an easy way to use up extra spinach. Thanks anyways for sharing:)

Fresh Veggie Bagel Sandwich

Reviewed: Aug. 22, 2011
Yummy!! Loved it!! I did make a couple of changes mostly because of neccessity. I used a thin bagel, added garlic and onions, switched the lettuce for spinach, used horseradish mustard, and didn't add alfalfa sprouts(had none). I will definitely be making this again and again!!!! Thanks for the recipe!!

Apple-Banana Oatmeal

Reviewed: Aug. 22, 2011
This recipe is extremely filling. Mine turned out very thick, which is not normally how I prefer my oatmeal. I followed the recipe exactly as written. I tried it with and without brown sugar, and it is definitely better without it. The banana and orange juice provide plenty of sweetness. Although I enjoyed this recipe, I probably won't make it very often because I've tried better. Thanks for sharing.

Serbian Ground Beef, Veggie, and Potato Bake

Reviewed: Aug. 20, 2011
Made this for all my brothers and sisters tonight and they cleaned out both pans!! I did make a few changes though because I didn't have certain ingredients. I didn't have paprika, cloves or red wine so I added garlic powder, nutmeg, and extra water. I also skipped the bullion and used half ground beef, half ground deer. I never actually tried the casserole myself simply because I try to eat healthy. But my family enjoyed it and I will definitely be making it again. Thanks so much!! :D

Chocolate Eclair Dessert

Reviewed: Jul. 30, 2011
This dessert is AWESOME!!!!!! I have been making it for a couple of months now and I always get rave reviews. It's so simple and easy to throw together. HINT: You want to refrigerate for at least a couple of hours to allow the pudding to soak into the Graham crackers. Everyone needs to try this dessert!!!! Yum yum!! :))

Apple Brickle Dip

Reviewed: Jul. 26, 2011
My dad actually brought this recipe home with him after an out-of-town trip. He had tried it at a church he attended and enjoyed it so much that he obtained the recipe. Now it is our absolute favorite apple dip. We often make it for church functions, family parties, and holidays. It is a big hit every time!!

Donut Muffins

Reviewed: Jul. 17, 2011
Awesome!!! I LOVED them and so did my family. Some of the other reviewers suggested that you only dip the tops in sugar so I did some with just the tops dipped and some with the whole thing dipped. Excellent either way. I will be making these over and over again. Make sure to make more than one batch because they will be gone in seconds!!! Thanks for this delicious recipe!!

To Die For Blueberry Muffins

Reviewed: Jul. 17, 2011
These are excellent!!! I used blackberries instead of blue and I also added 1/3 cup sugar. I was very happy with them and will for sure be making them again. The only advice I would give is to NOT go easy on the crumb topping. The more the better!!!! Thanks for this wonderful recipe!!
