Chicken Cordon Bleu II

Reviewed: Feb. 10, 2012
Amazing!! Worth more than five stars for sure. Everyone in my family loves it. My dad teases company that we invited them over just because he wanted my mom to make this dish:) Company always raves about how tender the chicken is. The two changes we make are to use water or chicken broth in place of the wine, and bread crumbs in place of flour. Turns out excellent every time!! Thanks so much for sharing!!

Awesome Broccoli-Cheese Casserole

Reviewed: Feb. 10, 2012
Family and company loved this!! We used fresh broccoli, 1/2 mayo and 1/2 sour cream, and added a butter cracker topping. It turned out great from what everyone told me(I didn't try it). Anyways, we are making it again tonight for some more guests. Thanks for sharing!!

Crustless Spinach Quiche

Reviewed: Jan. 31, 2012
This quiche is so simple and delicious!! I use 8 cups of fresh, chopped spinach in place of the frozen, and I also throw in some garlic with the onions. I just use whatever cheese we have on hand. Other additions that I've tried are mushrooms and ham. The first time I made this I put the quiche into mini muffin tins and it turned out great. Thanks so much for sharing!!

Spanish-Style Quinoa

Reviewed: Jan. 27, 2012
Spanish rice is one of my favorites and this was a great substitute now that I can't eat rice. Quinoa is fairly new to me and I thoroughly enjoyed this recipe. The changes I made was to add extra onion, garlic, and spice. Oh, I also added some cilantro and used a couple thai chiles in place of bell pepper. I was amazed at how good the flavor turned out to be. Thanks so much for sharing!!

Our Favorite Balsamic Vinaigrette

Reviewed: Jan. 27, 2012
Love it!! The only change I made was to leave out the shallot because I didn't have any. I also didn't even know what it was. Anyways, the dressing was still great without it. I eat fresh salads every day and I don't like using store-bought dressings because of all the preservatives and stuff added to them. This dressing is healthy and delicious!! Thanks for sharing:)

Pear Honey Cranberry Sauce

Reviewed: Jan. 7, 2012
My sister made this on Thanksgiving and my parents loved it, and couldn't stop raving about it. Most of the rest of my family enjoyed it, too. The only change she made was to use apple in place of pear. I didn't try it, but according to everyone else it was a little bit too sweet. Next time we will reduce either the sugar or honey. Thanks so much for sharing!! If my mom has anything to say about it, it will become a new holiday tradition:)

Easiest Egg Nog

Reviewed: Jan. 7, 2012
Very yummy!! Much healthier than store bought without all the HFCS, though still not really good for you. Next time I will try subbing honey for the sugar to increase the nutritional value. If this were thick instead of runny it would permanently replace store-bought eggnog. Oh, and I found that it is best to drink it within 1-2 days, otherwise it starts tasting kind of spoiled. Thanks for sharing!!

Key West Chicken

Reviewed: Jan. 7, 2012
Delicious!! This was so simple to do and super yummy. I did up the amount of honey and lime as some others suggested. I also baked it instead of grilled, and did not marinate it at all. My parents and I all enjoyed and they both made remarks on how good it was. Thanks for sharing!! This one is definitely a keeper:)

Orange-Ginger Sweet Potato Casserole

Reviewed: Dec. 5, 2011
This was a great, healthy alternative to the regular sweet potato casseroles that are loaded with sugar. Since I made it just for me I used two cups of sweet potatoes and then kind of guessed on the quantities of the rest of the ingredients. I think it was even better the next day. Thanks for sharing this yummy recipe!!!

Stuffed Peppers with Turkey and Vegetables

Reviewed: Oct. 15, 2011
Yummy!! This is the first time I've had stuffed peppers and after trying this recipe I love them!! I added celery, carrots, apples, and thai chiles, and I didn't have zucchini so I left that out. Following the suggestion of another reviewer I baked them for 40 minutes after stuffing and didn't pre-bake them at all. They were a little bit dry so when I warmed the leftovers up I poured a can of Mexican flavored tomato sauce over them and simmered them on medium heat until warm. This was a definite improvement and I will make it this way in the future. Thanks so much for sharing!!:)

Baked Oatmeal I

Reviewed: Oct. 15, 2011
Very simple to throw together!! Gathering from the reviews my siblings gave me it was very yummy as well. This was the first time they had ever tried baked oatmeal and they definitely enjoyed it. I doubled the recipe and made it in a 9x13 pan. I also omitted the raisins, subbed applesauce for the oil, and used half of the brown sugar called for. The only complaint I received was that it was a little too sweet. Next time I will reduce both the white and brown sugar. Thanks for sharing:) *update* As good as this recipe is, Baked Oatmeal II from this site is even better.

Mom's Country Gravy

Reviewed: Oct. 15, 2011
I followed the recipe exactly, except to substitute butter for the oil. After cooking it forever the gravy wouldn't thicken(which was very frustrating) so I ended up adding some cornstarch. My gravy turned out really dark. A a few of my siblings actually asked me if it was hot chocolate while I was making it:) Must have done something wrong somewhere... Anyhow, they liked it and ended up finishing it all. I probably wouldn't use this recipe again because of the bad experience I had making it, and we all still like sausage gravy alot better. Thanks for sharing though.

Oven Fried Chicken II

Reviewed: Oct. 15, 2011
Much simpler than fried chicken and almost as delicious!! These were fun to make and everyone enjoyed eating them. My mom said that this chicken should become one of our new "company dishes." We followed the recipe as written except to use cajun seasoning in place of paprika. This one will for sure be made again!! Thanks for sharing!!

Spinach and Feta Turkey Burgers

Reviewed: Oct. 15, 2011
Mmmm....Delicious!! I started making them and halfway through I discovered that I didn't have any cheese. Even without the cheese they were great!! I used fresh spinach, doubled the garlic, and added some chicago steak seasoning. Next time I will be sure I have some feta cheese!! I am sure they would taste even better. Thanks for sharing:) P.S.( Would be a five-star, but I wanted to wait and try it with the feta added.)

Migas II

Reviewed: Oct. 3, 2011
My siblings all really liked this. For some reason I couldn't get the tortillas crispy enough though. Next time I think I will just use tortilla chips. The only changes I made were to add some potatoes and taco seasoning. Thanks for sharing this simple recipe!! I will be making it again!!:)

Chili Chicken

Reviewed: Oct. 3, 2011
Enjoyed this:) Made it for dinner tonight and it was very simple to throw together. I didn't remove the skins from the chickens, used toyomansi sauce in place of soy, and let the chicken marinate for an hour and a half. Then I dumped it all into baking pan, marinade included, and baked at 350 for over an hour. Turned out delicious. Next time I will for sure remove the skin to let the flavor soak into the chicken better(my mistake for not removing it in the first place). I will be making this again and will probably try it grilled next time. Thanks for sharing!! P.S. I used the leftover sauce in the pan after I had baked it to cook/steam some broccoli in. It was amazing!! Yum, yum yum!! You have to try it this way!!
