Brown Sugar Chocolate Crackle Cookies

Had no chocolate chips, so I substituted 9T unsweetened cocoa powder, 7T sugar and 3T melted shortening for the chocolate chips. Excellent outcome and perfectly formed crackle cookies. Thank you.

Fennel Soda Bread

Wow, yummy. Had no buttermilk, so I did half 0% fat greek yogurt and half soured milk. Figured my fennel seeds had been around a few years, so I first placed them within some wax paper and whacked them with the metal mallett to release flavor. Fun project for adult son and I to easily make on St. Pat's Day, and everyone loved the aroma, and taste. I used a 10" diameter pie plate.

Honey Glazed Brussels Sprouts

Thanks for posting this! I recently had a brussels sprouts appetizer at Cafe Melissa's in Avon Lake, OH. I came home to look for a similar recipe and luckily found yours! Prior to this weekend, I avoided brussels sprouts, but I am a new convert! I think the Asian flavors work well with the cabbage flavor of the sprouts.

Chocolate Lovers' Favorite Cake

Great result despite having no power mixer. Currently, I only have a little hand-held mixer and the stiff batter overwhelmed the motor. I did all my mixing with a wooden spoon, and certainly not for four minutes as I felt the batter was starting to develop its gluten framework within one minute. So, I had not much volume at all, and considered a potentially bad outcome. However, after baking 60 minutes and resting for ten minutes, that puppy came beautifully from the Bundt pan, even with standard chocolate chips mixed in. Needless to say, I am re-doubling my efforts to buy an original Kitchen Aid stand mixer on EBay, as I understand they are superior to the current new ones.

Boston Brown Bread III

I added 1/2 c. softened raisins and two tablespoons of melted shortening to be sure that it was tender and not chewy. We all think it is delicious. Also, my bread pan is a glass Pyrex, at 4.5" x 8.5". I used my extra batter to fill a baby bread pan, too.
