Oven BBQ

Sauce never thickened, so I added a thickening agent (pre-blended cornstarch and some of the broth) and it worked like a charm. Thanks!

Luscious Grape Salad

October Apple Pie

A great twist on an old favorite! Having no caramel squares on hand, I use caramel Torani syrup and just cut the white sugar by 50%. Worked like a charm. Thanks!

Taco Pumpkin Seeds

This recipe seems almost like cheating. lol. If you wish to forego the "taco seasoning packet", you can also just sprinkle these spices prior to baking: black pepper, cumin and chili powder. Add salt (or seasoned salt) to taste. =)

Wild Mushroom Puff Pastry

Rather than do the pockets, I used a mini muffin pan. Left each serving uncovered so I would have enough dough for 24 mini bites. Also left out the heavy cream in an attempt to cut calories and had no shallots. Tastes just as good with the garlic, mushrooms, thyme and cheese alone. Soooooo yummy! Thanks :)

Pumpkin Chili

For cooks who may not have "pumpkin spice", an acknowledged substitute is to mix 1/4 cup cinnamon with 1 Tbsp each of ground ginger, nutmeg, and ground cloves. I used clamato in lieu of tomato juice and it tasted just fine. Sprinkle some cheese and a parsley sprig across the top for garnish. Delicious!

Best Strawberry Daiquiri

I opted out of the lime & lemon juice and just used a lime&lemon carbonated soda I had on hand. Decreased the ice to 4 cubes since my strawberries were already frozen solid through. Perfect!

Island Chicken with Fruit Salsa

Love the addition of rum and fruit paired with the paltry. Only complaint is that the salsa runs a bit too fluid. Otherwise, great dish!

Coconut Shrimp II

As a huge fan of seafood and coconut (especially together!), I make this recipe a lot. I do add a bit more beer for flavor and add a cup of panko crumbs to the coconut shreds for crispiness. If you don't mind the cost, you can substitute coconut cooking oil for the vegetable oil to make it a bit healthier.

Fish Tacos

Mexican sour cream (added to the mayo & lime) is a lot better tasting and more authentic than yogurt. Also, be warned that buying substitutions for this recipe yield badly tasting results. Use quality beer (preferably Mexican) and lime. No lemon, as it will cause the sauce to taste quite different. To save oil, I used a smaller sauce pot for the deep fry and to cut calories, I steamed the tortillas in the microwave rather than fried. Make a homemade salsa of cilantro, red onions, Lowry's garlic pepper, and fresh tomatoes for added flavor and health. =)
