Angela's Awesome Enchiladas

My husband said it was delicious and I agree! Made it with light sour cream and reduced the amount to 3/4 C and used low fat, low sodium soup. Added a pinch of cumin. I didn't put cheese inside the enchiladas and only put 1/4 C of grated colby jack cheese on top which melted really well and spread out to cover each enchilada. Also, I shredded 2 leftover grilled chicken breast (which was less than the called for 2 lbs). Used Pam spray in a non-stick pan to sautee white onion with 1/2 of a green & 1/2 of a red bell pepper. I didn't have green onions, black olives or onion powder. Four stars because the tortillas were really soggy. And that is after I toasted them on my gas stove top. Overall.. excellent taste and I will try the crock pot suggestion to save time! Thanks for sharing! I wish I was creative enough to come up with such a delish recipe!

Garlic Seasoned Baked Pork Chops

Yummy!! And all my picky eaters gobbled it up! I did not change the recipe however to avoid another dirty dish I put the 2T of butter in the baking dish and let it melt in the preheating oven while I prepped the egg wash, grabbed the seasonings and opened the pork chops. It was an incredibly easy recipe and easy clean up. I served with scalloped potatoes and green beans. Thank you for sharing!

Baked Split Chicken Breast

My family loved it, including our picky 5 and 7 yr old kids! I followed the recipe omitting the 45 min. in the frig step. I also put some of the seasoning mix under the chicken skin. 3 large split breast (1 was very thick) were cooked w/in 60 minutes. They came out moist and crispy. My husband (also very picky) said it was the best chicken I've ever made. Thanks so much! It's a keeper!!

Veal Meat Loaf

I reduced the recipe by half. Hubby and I thought it was good, but a little bland. I made it w/fresh chopped white onion and used a drained can of shitake mushrooms. Also used Italian Seasoned Bread Crumbs. Since I didn't use the soup mix; I added slightly less warm water along with onion powder, garlic powder, salt and pepper. So we were quite surprised it was bland. I also threw in a tablespoon of Oats as suggested. Placed in a smaller loaf pan and baked as written. I served this with blanched asparagus and hollandaise sauce. Dribbling the sauce on the meat helped. We both had seconds. So I will make it again. Just got to get my seasoning right. Thanks for the unique recipe!

Cindy's Coleslaw

Yum! I needed a quick side dish and this did the trick!! I thought it was quite tasty for being such a fast fix. Thank you for sharing it! I reduced the serving size to 4 and used a 1/4 head of green cabbage. Thinly sliced it and tossed in a few handfuls of pre-shredded carrots. I will be using this recipe a lot this summer!

Szechwan Shrimp

I thought it was good and spicy, but it didn't seem like a "restaurant" meal. I tripled the recipe as suggested and added in my own chopped stir fry veggies of celery, red bellpepper & onions. I think next time I will reduce by 50% the amt of ketchup & honey. It was a bit too sweet for my tastebuds. The ketchup was a bit over powering in taste and like another reviewer said, it really didn't smell good while cooking.
