About this Cook
I feel like I’m 24 yrs old, but I’m not. And at last count I've got 2 kids, 2 pets and a great husband. I'm a SAHM with everyday filled with washing, drying and folding laundry at least two loads a day. I'm consistently picking up and putting away random family items, preparing all 3 meals except Saturday and Sunday night dinners. Of course I'm involved with our elementary school,volunteering, playing and homework with our kids!
My favorite things to cook
I'm a meat and pototoes kinda gal. However, we lived in Cali and it made me learn to cook TexMex. I'm still trying to master seafood and flavorful side vegetables. We are not a casserole family.
My favorite family cooking traditions
Love Love Love the big holiday meals. For years I "helped" my Grandma and Mom, Then it was Grandma watching and advising as my older sister & I made the traditional turkey meal. And Mom teaching us her secret stuffing recipe. Which entails using a large brown grocery bag!!!
My cooking triumphs
My husband calls them "Jana surprises". Usually a combination of several recipes made into Surprise!! It's what's for dinner.
My cooking tragedies
1. Boiled the chicken in vinegar instead of white cooking wine. I didn't know what I was doing until my sister walked in and announced "It smells like Easter!" 2. I once was responsible for preparing and serving my sister's bday cake at her party. I placed the cake in the oven; went upstairs to gussy up; came back into the kitchen and learned I had broiled her Birthday Cake!

Awesome Rice Pilaf
I will make this again. It was delicious. I used frozen corn, peas and green beans. As a note I added the minced garlic after softening the carrots, onions and celery. When the Garlic released its aroma (approx. 1 minute) I then added the remaining ingredients.

Angela's Awesome Enchiladas
My husband said it was delicious and I agree! Made it with light sour cream and reduced the amount to 3/4 C and used low fat, low sodium soup. Added a pinch of cumin. I didn't put cheese inside the enchiladas and only put 1/4 C of grated colby jack cheese on top which melted really well and spread out to cover each enchilada. Also, I shredded 2 leftover grilled chicken breast (which was less than the called for 2 lbs). Used Pam spray in a non-stick pan to sautee white onion with 1/2 of a green & 1/2 of a red bell pepper. I didn't have green onions, black olives or onion powder. Four stars because the tortillas were really soggy. And that is after I toasted them on my gas stove top. Overall.. excellent taste and I will try the crock pot suggestion to save time! Thanks for sharing! I wish I was creative enough to come up with such a delish recipe!

Garlic Seasoned Baked Pork Chops
Yummy!! And all my picky eaters gobbled it up! I did not change the recipe however to avoid another dirty dish I put the 2T of butter in the baking dish and let it melt in the preheating oven while I prepped the egg wash, grabbed the seasonings and opened the pork chops. It was an incredibly easy recipe and easy clean up. I served with scalloped potatoes and green beans. Thank you for sharing!
