Chickpea Soup I

Excellent food for kids. I have a 3 yr old and a 1 yr old who, of course, don't at their veggies. I always look for recipes that they can eat and be clueless about veggies. I just made this for the first time and they both finished their servings with the 3 yr old asking for more, which rarely happens with non-chocolate items. What I did differently: I ballparked the quantities: 2 cloves of garlic, half an onion, one smallish sweet potato. I didn't have broth so I simply used water, salt and pepper to taste. I also didn't have the recommended herbs and used all seasoning and Italian seasoning instead. Then I added already steamed veggies (carrots, peas, corn and green beans), and 1/2 cup rice. It's possibly a different soup than what the recipes says. but it turned out delish. Most importantly, it's loaded with veggies.

Maria's Stuffed Chicken Breasts

very good although I modified this substantially. I tenderized the chicken breasts and filled them with a mixture of cottage cheese, sour cream, smashed garlic, salt, and wilted fresh spinach. I rolled the mixture into the chicken breasts, and cooked the meat in the over at 350 for 30 minutes. Then I spooned some spaghetti sauce with fresh basil on the chicken, put it back in the oven for another 15 minutes. It was delicious. Will definitely make again.

Orange Cranberry Oatmeal

I love oatmeal and it's one of my usual breakfast cereal, and this recipe is delicious and brings a new flavor to it. I modified the recipe as follows: - used quick oats, put it in a bowl, added some of the juice from the canned mandarins and water, and microwaved for 1 min; - added walnuts, raisins and some of the mandarins; - served to hubby (who doesn't really like oatmeal), and he asked for it the following day too. Great recipe, thanks Jenni Oyler.

Sloppy Joe Sandwiches

Not bad for basic sloppy joes. My suggestion is to skip the sugar especially if you don't like too sweet. The ketchup is sweet enough already and the sugar makes it too sweet.

Kickin' Collard Greens

Easy Meatloaf

I made this recipes many times as I love meatloaf. Very easy to make and very, very tasty. I added one carrot, half one green pepper and half one red pepper, some parsley and lots and lots of dill, just because I love dill. I mixed all ingredients and baked them without the sauce. When meatloaf was cooked, I sprinkled ketchup only on top (without the brown sugar and the mustard). It's amazing!
