Ghirardelli® Triple Chocolate Truffle Cake

Whoa. This is seriously decadent and rich for all it's ease of making. I followed this recipe to a T, and it was PERFECT. I hid the fact about the calories; and the birthday party I made it for went crazy over it. Literally, there was no shortage of praise for this cake and I have to make it again for the birthday this year. One note: cut into 16ths, not 8ths. It was so rich some people couldn't finish their slice -- and it does hold together very well where you can make the slices smaller.

Zucchini with Chickpea and Mushroom Stuffing

This was so tasty!! Just a note though -- get the largest zucchini you can and use a melon baller. I used teeny zucchini and while it was easy to eat, they were hard to stuff and chickpeas were rolling everywhere.

Boudreaux's Zydeco Stomp Gumbo

Holy Smokes! This was fantastic! My boyfriend refuses to eat sausage, but even he nom'd this stuff down. A word to the wise, though -- if you choose to add your own spices (like I did, and like many do), watch it with the cayenne. I may have OD'd on it. While it did not render this fabulous gumbo inedible, it definitely packed a wallop.

Golden Rum Cake

This is my first time baking with booze where the booze actually makes it into the batter -- and I must say it went really well! I used Captain Morgan's Tattoo rum, which smelled incredible. It also gave it a lot of warmth and sweetness. It's definitely a mixer rum, which is why I picked it. Plus, who can resist the Captain? He's a pretty charming, good looking pirate! Overall, it turned out great!!! I would definitely make this again, and I probably will. Though, the only note I'd make is to cut the glaze recipe in half, because that's all I needed to really soak into the cake.

Mistakenly Zesty Pork Chops

Wow! This is a great 'mistake'! I tried this the other night, and my boyfriend was both shocked and delighted when I told him I basically used cocktail sauce for this marinade. I would definitely do this again!! I think next time I might add a wee bit of cayenne or crushed red pepper for an extra kick!

French Onion Soup Gratinee

I made this the other night, and it was fantastic! I was shocked, as it was my first attempt at French Onion soup. The only thing I changed was that I went half-and-half on the beef and chicken broth -- in the end I think I used 32 oz of each (Low Sodium!). It created a really hearty flavor. Also, I didn't have the fresh herbs, so I just threw about a 1/2 TBSP each of the dry version into the soup, it didn't seem to make the flavor worse. :)

Smothered Mexican Lasagna

I made this for my boyfriend and I the other night, and while I am still impressed with the idea, some tweaking needs to be done. The Ricotta didn't go over well AT ALL. My boyfriend said it generally ruined the whole dish, not really fitting in with any of the Mexican flavors and being this dense layer in the middle. I don't know what I'd replace it with -- guac, maybe? I didn't care for it either. Also, maybe it was the fact that I used 93/7 lean turkey, but there was no flavor to it, even with the taco seasoning that we love. I would use beef or pork next time.

Peanut Butter Kiss Cookies

I made these for part of my New Years' buffet, and they were a hit! Just a note -- really stick to the size indicated or your peanut butter to chocolate ratio will be off. Also, I added 1/2 a tablespoon of vegetable oil to a double batch of dough to make sure they stayed nice and moist, and that was one of the biggest compliments I received that night: how nice and moist the cookies were.

Baked Dijon Salmon

I wanted to cook something really nice for my boyfriend, and we hadn't had salmon in a while. Usually my own concoctions with the fish are mediocre -- but he was completely WOW'd by this recipe!! I made sure the Dijon mustard I used was really coarse, which I think added quite a bit more to the flavor. I also used Panko instead of the traditional bread crumbs. I will be making this again! It's so easy, and it tastes so good!

Easy Banana Bread

My boyfriend can't get enough of this bread! I added 1 C of chopped Walnuts, and I also substituted 1 C of the white sugar for 1 C of light brown. This was the first time I've ever made bread, and it came out perfectly, thanks to this recipe! I have two beautiful loaves of banana bread!
