Easy Hummus

Reviewed: Jul. 15, 2011
I used roasted red pepper instead of jalapenos... still spicy but a little more kid friendly. LOVE it!

Easy Slow Cooker Meatballs

Reviewed: Jul. 18, 2011
I made these for six hungry teenagers (are there any other kind?), and it was great! I added some roasted red pepper cause I like a little spice, but otherwise followed the recipe. I used 80/20 ground chuck as other reviewers said they could be a little dry-- but was dismayed to see a thick layer of oil floating on top at the end. I ladled it out, but the sauce was still a little oily. Plus there seemed to be too little sauce compared to the volume of meatballs. I served two each, but there were some who only wanted sauce. Next time I think I'll use leaner beef, and use only a pound instead of a pound and a half. Thanks, this one is a keeper!

Slow Cooker Mongolian Beef

Reviewed: Jul. 29, 2011
I tried this after work because if I had left it on Low for 10 hours, no telling what it would have been (Mongolian stew?). Instead I cooked it on High for 2 hours. It turned out very well, and the sauce is fantastic. I did add about a teaspoon of red pepper pepper flakes, as others suggested, and it was just spicy enough for us (but we do like spicy). I also added the onions in the last hour, as others suggested as well. I'm giving it four stars instead of five, tho, because it needs a little crunch. I will add broccoli or water chestnuts next time.

Spinach Lasagna Rolls

Reviewed: Sep. 12, 2011
Tried this one and went exactly by the recipe and it was great! Even my tween, who "doesn't like" spinach ate it up :) I made a couple extra lasagna noodles, in case they stuck together or tore, and ended up using all eight noodles... which was a good thing, because they ate every one!
