Coconut Poke Cake
I've made this two ways, with and without the sweetened condensed milk. Just the coconut cream is perfect. The sweetened condensed milk is not necessary at all(a bit too sweet)! I added coconut extract to the cake and the whipped cream (real not cool-whip). Very easy and a winner!

Balsamic Roasted Pork Loin
This by far is the BEST recipe ever! The bad reviewer most must have used poor quality balsamic vinegar. I used "Ariston" brand balsamic vinegar. It is much like the ones I had in Italy. It's available online or at many kitchen stores. It's great for everything! I added extra garlic because I had to use it up and like things really garlicky. My family was very impressed and you will be as well!

Cookie Balls
I loved them! I knew enough to put the balls in the freezer on a cookie sheet like many other recipes that are similar (peanut butter chocolate balls). I used the food processor and then sprinkled in some sea salt to cut the super sweetness. It really did the trick! I used the bulk chocolate from the supermarket as it's better than chips or almond bark (Belgian)and melted in a double boiler. I would add some wax next time to the chocolate to add a bit of thickness and sheen, about the size of a lipstick per batch. That works with well with other recipes.
