Divine Casserole

This recipe is pretty tastey, especially for cheese lovers. I used low fat / fat free ingredients to help reduce the fat content, and I substituted Ricotta for the Cream Cheese. Next time I will probably use Tomato Sauce instead of tomato paste - I did not like the texture or taste of the paste alone.

Baked Macaroni and Cheese III

Having never made macaroni and cheese from scratch before, I wanted to try a recipe that was relatively easy to make. This one hit the mark, and it was very tastey. A great recipe to make if you're looking for a traditional dish without a lot of extras.

Cheesy Chicken-and-Pasta Bake

I was hoping for a dish with more flavor. Since I'm new to the kitchen, I didn't try to dress-up the recipe with extra seasoning and felt it was too bland. However, my guests did enjoy it enough to ask for the recipe.

Chicken Noodle Casserole I

Everyone enjoyed this dish, even my pickiest eater! (He's 1). I, too, adjusted this recipe to include diced onions, carrots, garlic, and celery and added the Rosemary & Thyme. I substituted cheese for the breaded topping - hubby doesn't like breaded topping. Will definitely make again!

Curried Butternut Squash and Pear Soup

I've made this before and liked it fine but decided it needed more. So this time I accidentally used 4 Tbsp butter and added 1/8 tsp cayenne pepper, some coriander - maybe 1/2 tsp, 1/4 tsp pepper, a couple of small pinches of red pepper flakes, 2 cloves of garlic - because I like garlic, 1 pear, and some milk maybe 1 to 1-1/2 cups until it wasn't too thick anymore. Perfect.
