Our Best Cheesecake

Great! Exactly what I was hoping for-- easy, creamy, delicious. Made four small cakes in my mini cheese cake spring forms. Stirred chocolate chips into one and topped another with strawberries. So good. Made exactly as directed, barring the name brands :).

Best Chocolate Chip Cookies

FYI: I was out of butter--had just about 2 tablespoons. So I softened it and used it, but I used Canola oil for the rest of the 1 cup called for (an experiment! :)) I followed the rest exactly, and to my surprise and delight, these are still great! It made a flat, crispy cookie around the outside with a little chewy center (they've cooled about an hour now...). So good, but I love flat crispy cookies, not thick cakey ones. 11 minutes at 350. Hope your results are similar. I wonder if they would have more "buttery" flavor with the actual butter, but I'm very pleased and would make these again! Notes: I doubled my baking pans to avoid burning the bottoms and used parchment paper. Perfect!

Roasted Garlic Cauliflower

GREAT! I used four cloves of garlic and tossed directly in baking dish--no bag. Baked covered 400 for 20 minutes or so. Tossed with more fresh-grated parm than called for (doubled?) and a handful of plain breadcrumbs--broiled per directions. We loved this--even the non-cauliflower fans.

Pumpkin Casserole

I don't know if I would call this "casserole." We call it "Pumpkin Stuff" at my house now :). It's more like a custard?? My healthier version: I cut way down on the sugar (use agave syrup or a little brown sugar instead), use about 2 T. of butter, use whole wheat flour, regular 2% milk instead of evaporated. Rating 4 instead of 5 not for taste but simply because it's not really a casserole and is very dessert-like. Great way to serve a veggie to picky kids, though! We enjoy this.

Happy with the results. Use a very light/airy frosting on the exterior because the cake is very delicate. My teenage kids had trouble spreading without wrecking it. Overall, success! Try it!

Amazing Butternut Squash

Nice change from the typical supersweet recipes for squash. Made just as directed--very happy, especially my husband who won't eat squash "sweet." If you want sweet squash with brown sugar and maple syrup, etc. this isn't it! :) As a savory dish--really good just as written.

Gingerbread Men Cookies

After reading some reviews, I used one quarter cup light corn syrup and one quarter cup molasses. I thought they might have been a little more ginger-y, but I like to really taste that ginger. I let them refrigerate for about three hours only and had great success. Baked the full time and ended up with nice crunchy cookies that were a hit. Oh, and a as side note, I used half whole wheat flour and they were still good.. Not rocks :)

Zucchini Appetizers

After reading these reviews, I increased the bisquick, doubled the garlic, grated the zucchini, added cheddar cheese (per a similar recipe). I accidentally omitted the oil but didn't miss it (oops!) & baked in a mini-muffin tin about 17 minutes. Made an easy & decent appetizer :) that was more biscuit-like, less egg-y than others mention. I definitely liked it and would re-make, but I don't know that it would get raves, even if followed exactly??

Slow Cooker Balsamic Chicken

I make this from time to time now cause it's soo easy...esp. when nothing's defrosted... and I always have this stuff on hand. It is a good weeknight dinner. Not my favorite meal ever, but decent and worth a try. I DO use frozen chicken breasts (yay).

Baked Asparagus with Balsamic Butter Sauce

Pretty much tasted like plain roasted asparagus; did not find flavorful. I did brown the butter. Used 1 t. soy and 1 T. balsamic per reader reviews... maybe that was the prob? Reduced them in the pan a bit because the balsamic was so acidic... Not bad, just no raves here.

Fruit Dip II

This isn't fluffy or creamy, in my opinion. More tacky and gooey. Not my taste. Was looking for something lighter in texture, I guess. I stirred in cocoa powder per one reviewers suggestion. chocolate flavor was nice, but the texture wasn't what I was hoping for.
