Sean's Falafel and Cucumber Sauce

This recipe was amazing. I did this in the food processor, used dried parsley. I just pan fried these. I highly recommend this recipe. Unfortunately, my husband didn't like it (no surprise there). It's a great quick meal that I will still make frequently for myself I think. When I first made it, I just fried up 4 of the balls, and put the other 4 in the fridge to fry up as needed. It took about 5 minutes to fry them up to eat for my lunches, so to me its just as quick as a sandwich, but a little bit special.

Cheddar Bay Biscuits

I love these biscuits. I decided to pan fry them for some reason, and I won't do that again, but I will definitely make them the normal way!

Russian Tea Cakes I

These were great! Some of the best tea cookies ever, and I have made a lot of tea cookies in my day. We did increase the sugar a little (my old recipe had a lot more, so we compromised). It was a few months ago now, but I think we increased it to 1/3 cup. Make these. They are so yummy.

Vegetarian Tortilla Soup

This recipe is sooo good. We love it. I followed it to a T the first time. After that, I cut up my own onions and peppers (cheaper). I used less cumin because I ran out. I definitely recommend using the full amount, or almost the full amount of cumin. It tastes so good. Love it!

Double Tomato Bruschetta

This is great stuff. I use a can of petite diced tomatoes and skip the dried tomatoes. It is more cost of effective and faster this way. Everyone loves it and no one has ever noticed the difference. This is one I like to take to parties. Also, the cheese is unnecessary. If you don't have it on hand, don't worry about it. Make it anyway. It amazing even without it!

Absolutely Fabulous Greek/House Dressing

This dressing is awesome. I always have it on hand. I reduce the portion size to fit in a old bottle I have. Definitely recommended.

Pesto

This is great pesto. I made some substitution based on what was in my pantry. Walnuts instead of pine. Omitted the parmesan. I mixed this with a can of petite diced tomatoes as a pasta sauce, and my picky husband raved over it.

Brown Sugar Meatloaf

Mom's Zucchini Bread

This zucchini bread was pretty great. The only problem I had with it was that I substituted 1/2 of the oil for apple sauce, and I could tell. It was still pretty great, but not AS great. Oh well. I guess its worth it to be a little healthier. I also added 1-2 cups more of zucchini. Also, I had much better results making it as bread than as muffins. I think because the muffins cook faster it doesn't give the zucchini enough time to cook down or something. I don't know. But definitely make the loaves.

Chicken Enchiladas II

These were amazing. I hesitated b/c I don't like to use processed canned food. But I was not sorry! My husband said these are the only enchiladas I should ever make. And he loved the ones I used to make! My friends loved it too. Next time I make it, I will make my own cream of chicken soup. I can't wait!!

Monster Cookies I

This recipe is really good. If you make the cookies normal-size, it makes soooooo many. I've cut the recipe down to 1/6th before, and it still made 9 huge cookes. It literally could have made 4 dozen regular size cookies. So just be prepared. In my oven, I bake them just under 12 minutes, that keeps them more chewier instead of crispier. I definitely recommend this recipe. Also, I got huge compliments on these cookies. That's always nice.

Downeast Maine Pumpkin Bread

This recipe was really great. I followed the recipe, other than replacing 3/4 of the oil with applesauce, and 1 1/2 cups of the flour with wheat. I also added about a cup of chopped walnuts. This goes together really easily. I made them last night and we ate them for breakfast this morning. I will definitely make it again.

Chocolate Covered Cherries II

I don't know why I made these. I don't even like choco covered cherries. But a lot of people do, so I made them to give as gifts at Christmas. I followed the recipe exactly, and I still have a bunch of it sitting in my cupboard four months later. Oh well. They looked really nice.
